Three Corn Casserole Recipes
Sherry wanted baked corn recipes in the 6/29 newsletter. Here are recipes we enjoy and are always popular with family and friends. The last recipe was shared by Linda in a previous newsletter.

Sour Cream Corn Casserole Recipe

2 tbsp. Butter
2 tbsp. chopped onion
1 c. sour cream
1 1/2 lbs. whole kernel corn
2 tbsp. finely chopped celery
6 slices crisp cooked bacon, drained & crumbled
1 tbsp. fresh parsley

In saucepan melt butter. Stir in onion and saute until transparent. Gradually stir in sour cream until smooth. Add corn and celery. Heat. Stir in half of bacon. Pour into 2 quart casserole and top with parsley and remaining bacon. Bake at 350 degrees for 30 to 45 minutes. 6 to 8 servings.

Fiesta Corn Recipe

1/2 c. sour cream dip (French onion or Ranch)
1 tbsp. flour
1 tsp. sugar
2 cans (15 1/4 oz.) whole corn, drained

Stir together dip, flour and sugar. Add corn. Spoon into 1-quart casserole dish sprayed with non stick spray. Sprinkle with broken corn chips or cheese flavored crackers.
Bake, uncovered, at 375F for 30 minutes or until heated through.

Southwestern Corn Casserole Recipe

1 (14-16 ounce) can whole kernel corn, drained
1 (14-16 ounce) can cream style corn
3/4 cup bread crumbs
1/2 cup red bell pepper, chopped
1/2 tsp. Louisiana hot sauce (or less)
2 tbs. chopped pimiento
salt and pepper to taste
1 tsp. sugar
2 tsp. melted margarine

Preheat oven to 350. Combine corns, bell pepper, hot sauce, pimiento, salt, pepper, & sugar. Mix well. Pour into a baking dish sprayed with non stick spray. Top with bread crumbs & drizzle melted margarine over bread crumbs. Bake 35 minutes.
Makes 4-6 Servings
