Cornmeal Berry Muffins Recipe

Ingredients
1/2 cup plain yogurt
1/2 cup milk
3 eggs
1/2 stick butter, melted
1 1/3 cups all-purpose flour
2/3 cup cornmeal
1/3 cup sugar
3 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1-1/2 cups mixed berries (blueberries, blackberries, raspberries)
1 tablespoon sugar

Directions
Heat oven to 400 degrees. Combine yogurt, milk, eggs and butter in mixing bowl. Combine dry ingredients, except 1 tablespoon sugar and stir into liquid ingredients. Stir in berries just until combined. Spoon into muffin cups and sprinkle each muffin with sugar. Bake 20 to 25 minutes, or until muffins are lightly browned.

This is a great breakfast treat with coffee. To make it even more tropical you can add a bit of coconut and chopped nuts. I like to spread soft butter or cream cheese on it but it is fine just as it is.
Makes 12 muffins.
