This holiday season I spent my time trying to clean out my computer of unwanted files and emails. It is amazing just how many emails one can get in their inbox when there is an election. I also found some emails from our recipe family that had not been opened yet so I am assuming they have not been posted before. If they have just pretend they are not there by ignoring them. I you do not see a message you have sent please send it again and I will post them.

Cuddles is so much company. He is very curious and tends to get into things often. Between 6 and 9 each evening is his time to get into everything. I have made him a box he can get into and enjoy. I put bottle caps, empty asprin carton, a new toy or a toy he hasn't seen in a while. Also add wadded papers with treats hidden in it. He loves to pull out everything and check it out each item. After playing with them he puts them back in the box and takes them out again. He loves new stuff in his box each evening. Cuddles is a curious cat and needs new adventures each day otherwise he is in to something he shouldn't be.

He is wonderful loving cat that loves to sit in the window during daylight hours. There is a squirrel that plays in the tree outside the window. The squirrel loves to tap on the window in the living room window screen. Cuddles runs as fast as he can to see the squirrel. After Cuddles is looking out the living room window, the squirrel knocks on the bedroom window. Cuddles spends the daylight hours running from one room to the other. He sleeps all night long because he has had a lot of squirrel exercise. I thought there was one squirrel but it turns out there are two. Thank you squirrels for giving my cat entertainment and exercise.... Nancy

Cinnamon Chips

Spoon Rolls Recipe

1 pkg. dry yeast
2 c. warm water, divided
1 t. sugar
1/4 c. sugar
1 egg, slightly beaten
1/2 c. vegetable oil
1-1/2 t. salt
4 c. all-purpose flour
3 t. baking powder

Add yeast to 1 cup of the warm water, along with 1 t. sugar. Allow it to bloom in a warm place for about 10 minutes. Add to a large bowl, along with the additional 1 c. water and remaining ingredients. Beat until well mixed. Place in an airtight container and store in refrigerator. As needed, spoon into a greased muffin tin. Bake at 400° F. for 15-20 minutes, or until golden brown. Any remaining dough can be stored in the refrigerator for up to 1 week.

Cinnamon Roll Pigs in a Blanket Recipe

10 fully cooked sausage links
1 can cinnamon rolls with frosting (5 rolls per can)

Preheat oven to 350°F. Place parchment paper or silicone baking sheet on a large baking sheet. Open and separate cinnamon rolls. Unroll each cinnamon roll and flatten to make a flat strip. Cut the strip in half length-wise. Wrap each sausage with a dough strip, turning cinnamon side in. Bake for 15 to 20 minutes. Drizzle rolls with icing. Serve warm.

Ambrosia Recipe

1 (20 oz.) can pineapple tidbits, drained
1 (11 oz.) can mandarin orange segments, drained
1-1/2 c. seedless grapes
1 c. miniature marshmallows
1 c. flaked coconut
1/2 c. chopped nuts
3/4 c. sour cream or vanilla yogurt
1 T. sugar

Combine fruit, marshmallows, coconut and nuts. Mix sour cream or yogurt with sugar. Fold into fruit mixture. Chill. Serves 4 to 6.

Angel Biscuits Recipe

5 c. all-purpose flour
1/4 c. sugar
3 t. baking powder
1 t. baking soda
1 t. salt
1 c. shortening
1 pkg. dry yeast (dissolved in 2 T. warm water and 1 t. sugar)
2 c. buttermilk

Allow yeast, water and 1 t. sugar to bloom for about 10 minutes. Sift dry ingredients together. Cut in shortening until it is in small pieces. Add 1 c. buttermilk and stir. Add yeast mixture to second cup of buttermilk and stir. Pour mixture into dough. Mix well and put in a greased bowl, cover and refrigerate overnight. As needed, roll out and cut with a round cutter. Bake at 400°F for 15 minutes. Biscuits do not have to raise after removing from refrigerator before baking. Dough will keep in refrigerator up to 5 days.

* Buttermilk powder and water can be substituted for buttermilk, according to package directions.
* If you don’t have buttermilk, put 2 T. vinegar in a 2 cup measure, then add milk to make 2 cups. Allow to sit for 5 minutes before adding to recipe.
*Dough can be refrigerated and used as needed, or baked all at once and frozen for later use.

Print Angel Biscuits Recipe

In my alphabet of vegetables, I'm up to S and after thinking about squash and spinach, I've decided on this Pennsylvania Dutch recipe for Sauerkraut.

Sauerkraut and Pork is the Pennsylvania Dutch dish that is served on New Year's, brought from German tradition.

Sauerkraut Recipe

2 T. butter
1/2 cup chopped onion
1 qt. sauerkraut (I use Silver Floss which now comes in a jar)
1 potato, pared & grated ( about 3/4 cup, grated)
1 t. caraway seed
Boiling water ( about 2 cups)

Melt butter in heavy saucepan. Add onion & cook until golden yellow.

Stir in sauerkraut & cook for 8 min. Mix in potato & caraway seed. Pour in the boiling water. Cook, uncovered, over low heat 30 min. Cover & continue cooking 30 min. longer. Brown sugar or an apple may be added to give different flavor. 6-8 servings.

I have had this recipe for years I used it a lot years ago but it had gotten lost in my recipes. I think it originally came from this site. This recipe is one I will use again soon.

Sweet and Sour Pork Recipe

1 1/2 lb. pork, fat trimmed and thinly
1 tsp. salt
2 tsp. (each) soy sauce, cornstarch
Dash of pepper

Mix together and marinate meat for 20 minutes.

Sweet and Sour Sauce Recipe

1/2 c. water
1/3 c. (each) sugar, vinegar
1 tbsp. (each) cornstarch, soy sauce

Combine and cook over high heat, stirring constantly, until clear and thick; set aside. 1 sm. green pepper, cubed
8 oz. pineapple chunks, drained
1/2 c. carrots, thinly sliced
1 onion, cut up in large pieces
2 tbsp. (each) water, oil

Heat wok first; add oil, then stir-fry meat until white; add carrots and water; cover and cook 2 minutes. Move everything up on holders in wok; add pineapple and sauce; bring to a boil; add onions and green pepper; cook 1 minute. Serve with hot rice.

Maple Pancakes Recipe

1 cup sifted, self-rising flour
1 tablespoon real maple syrup
1 egg, beaten
1 cup milk
3 tablespoon oil

Sift flour. Combine syrup, egg and milk; add gradually to flour, mixing only until
smooth. Add oil. Cook on hot greased griddle.

This is a recipe that came along with a chocolate cake recipe. I didn't care for the cake but the frosting is outstanding. I have made it several times and used it with boxed cake mixes. It makes any chocolate cake have that "extra something".

Chocolate Buttermilk Frosting Recipe

Makes about 1-1/2 cups
1/2 cup unsalted butter, softened
2 cups confectioners’ sugar
1/4 cup unsweetened cocoa powder
1/2 teaspoon kosher salt
3 tablespoons buttermilk

In the bowl of a stand mixer fi tted with the paddle attachment, beat butter at medium speed until creamy. In a small bowl, sift together confectioners’ sugar, cocoa, and salt. With mixer on low speed, gradually add cocoa mixture to butter, beating until combined. Stir in buttermilk until mixture reaches a spreadable consistency.

Crusted Fish Recipe
Makes 4 Serving

3 tablespoons reduced-fat mayonnaise
1 tablespoonlemonjuice
2 teaspoons Dijon mustard
1 teaspoon prepared horseradish
2 tablespoons gratedParmesan cheese,
4 tilapia fillets(5 ounces each)
1/4 cup drybreadcrumbs
2 teaspoons butter, melted

Preheat oven to 425°. Mix first four ingredients and 1 tablespoon cheese.
Place tilapia on a baking sheet coated with cooking spray; spread evenly with mayonnaise mixture.
Toss bread crumbs with melted butter and remaining cheese; sprinkle over fillets. Bake until fish just begins to flake easily with a fork, 12-15 minutes.

Per Serving fillet: 214 cal., 8g fat (3g sat. fat), 80mg chol., 292mg sodium, 7g carb. (1g sugars, 1g fiber), 28g pro.

Barbecued Pork Chops Recipe
Makes 6 Servings

1/3 cup hickory smoke-flavored barbecue sauce
1/3 cup A.1. steak sauce
1/3 cup sherry or unsweetened apple juice
2 Tbsp. honey
6 bone-in pork loin chops
(3/4 in. thick and 8 oz. each)
3/4 tsp. salt
1/2 tsp. pepper

Mix first four ingredients; reserve 1/3 cup sauce for serving. Sprinkle pork chops with salt and pepper. Place on an oiled grill rack over medium heat. Grill chops, covered, until a thermometer reads 145°, 4-6 minutes per side, brushing frequently with remaining sauce after turning. Let stand 5 minutes before serving. Serve with reserved sauce.

Per Serving 299 cal., 10g fat (4g sat. fat), 98mg chol., 771mg sod., 16g carb. (14g sugars, 0 fiber), 35g pro.
