Sauerkraut Recipe

2 T. butter
1/2 cup chopped onion
1 qt. sauerkraut (I use Silver Floss which now comes in a jar)
1 potato, pared & grated ( about 3/4 cup, grated)
1 t. caraway seed
Boiling water ( about 2 cups)

Melt butter in heavy saucepan. Add onion & cook until golden yellow.
Stir in sauerkraut & cook for 8 min. Mix in potato & caraway seed. Pour in the boiling water. Cook, uncovered, over low heat 30 min. Cover & continue cooking 30 min. longer. Brown sugar or an apple may be added to give different flavor. 6-8 servings.
