Spoon Rolls Recipe

1 pkg. dry yeast
2 c. warm water, divided
1 t. sugar
1/4 c. sugar
1 egg, slightly beaten
1/2 c. vegetable oil
1-1/2 t. salt
4 c. all-purpose flour
3 t. baking powder

Add yeast to 1 cup of the warm water, along with 1 t. sugar. Allow it to bloom in a warm place for about 10 minutes. Add to a large bowl, along with the additional 1 c. water and remaining ingredients. Beat until well mixed. Place in an airtight container and store in refrigerator. As needed, spoon into a greased muffin tin. Bake at 400 F. for 15-20 minutes, or until golden brown. Any remaining dough can be stored in the refrigerator for up to 1 week.
