Favorite Fudge Recipes
Easy Microwave Peanut Butter Fudge
12 oz. semi-sweet chocolate chips
1 can Eagle Brand milk
2 heaping tbsp. peanut butter
Place chocolate chips and milk in microwave safe bowl. Cook on high for 5
minutes. Remove from microwave, stir in 2 heaping tablespoons of peanut butter.
Spread in pan. Cool and cut.
Marshmallow Crème Fudge
(Old, old recipe taken off a jar of Kraft Marshmallow
Crème)
3-1/4 cups sugar
1-1/4 cups evaporated Milk
1 carton marshmallow crème
7-1/2 Tbsp. margarine
1 - 12 oz. Pkg. choc. Chips (semi-sweet)
1-1/4 cups chopped pecans (optional)
Cook sugar, milk and margarine. To med. Soft ball stage, (30 min. all together
on med. Low direct heat), stirring constantly. Remove from heat. Then
immediately add marshmallow crème, choc. Chips and nuts. Stir until marshmallow
crème and choc. Chips are melted and all well blended. Pour into a buttered 9 x
13 pan. Let cool and cut into squares.
Yields approximately 4 pounds.

3 c. sugar
3/4 c. light corn syrup
3/4 c. water
2 egg whites
1 c. chopped nuts
Combine sugar, corn syrup and water in saucepan; bring to boiling point. Reduce
heat; cook to hard ball stage. (Best to use candy thermometer.) Beat egg whites
until fluffy. May add 3 ounces dry strawberry or lime gelatin in at this point
if wanted but not necessary. Beat until stiff peaks form. Pour syrup slowly into
egg whites, beating constantly until candy loses gloss and holds shape. Add
nuts. Drop by spoonfuls on waxed paper.
Strawberry Divinity
3 c. sugar
3/4 c. light corn syrup
3/4 c. water
2 egg whites, stiffly beaten
1 (3 oz.) pkg. strawberry Jell-O
1 c. chopped nuts (optional)
1/2 c. flaked coconut (optional)
Combine sugar, syrup and water. Bring to a boil, stirring constantly. Then cook
without stirring to 260 degrees on candy thermometer. Combine beaten egg whites
and jello. Beat until mixture forms peaks. Pour hot syrup in a thin stream into
egg whites, beating constantly. Beat until candy loses its gloss and holds its
shape. Fold in nuts and coconut. Drop by spoonful onto wax paper.

Microwave Peanut Brittle
1 c. sugar
1/2 c. light corn syrup
1 c. raw peanuts
1/8 tsp. salt
1 tbsp. butter
1 tsp. vanilla
1 tsp. baking soda
Combine first 4 ingredients in 2-quart microwave mixing bowl. Microwave on HIGH
for 8 minutes, stirring after 4 minutes. Add butter. Microwave on HIGH 2
minutes. Brittle should not get too brown. Stir in vanilla and soda until light
and foamy. Spread on buttered baking sheet as thinly as possible. Cool. Break
into pieces. Soak mixing bowl in warm sudsy water immediately for easier
clean-up.
Old Fashioned Peanut Brittle
1 c. white sugar
1/2 c. white corn syrup
1 c. salted peanuts (without skins)
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda
Stir together white sugar and corn syrup in 2-quart bowl, microwave on High for
4 minutes. Add 1 cup salted peanuts (without skins) unsalted is also fine. Stir
well, microwave on High for 4 minutes. Add 1 teaspoon butter and 1 teaspoon
vanilla. Stir well. Microwave on High for 1 1/2 to 2 minutes. Add 1 teaspoon
baking soda. Stir gently until light and foamy. Pour mixture at once onto
buttered cookie sheet, cool 1/2 to 1 hour. HINTS: A 2-quart pitcher is very easy
to handle for the peanut brittle, as you do not have to tough the bowl at all
with a handle. A bowl will become very hot. If you use a wooden spoon you may
leave it in the bowl or pitcher while cooking for easier stirring. I use a Pyrex
two-quart pitcher for both of these recipes.
