Colorful Corn Salad Recipe

2 pkgs. ( 10 oz. each) frozen corn, thawed
2 cups diced green pepper
2 cups diced sweet red pepper
2 cups diced celery
1 cup minced fresh parsley
1 cup chopped green onions
1/2 cup shredded Parmesan cheese
2 t. ground cumin
1 1/2 t. salt
3/4 t. pepper
1/2 t. hot pepper sauce
1/8 t. cayenne pepper
3 T. olive oil
2 garlic cloves, minced
6 T lime juice

In a large bowl, combine the first 12 ingredients. In a microwave dish, combine oil & garlic. Microwave, uncovered, hi for 1 min. Cool. Whisk in lime juice. Pour over corn mixture & toss to coat. Cover & refrigerate until serving. ( tried cutting in half & it is still a lot)
