I am drinking lots of ice tea and lemonade  today. Temperature got up to 107. I did very little today except very close to my refrigerated air conditioning. I am so glad I have several oscilating fans as well. I stayed home all day because of the heat. I thought I heard last winter that when the weather got warmer the number of virus cases would  slow down. I just wondering how warm it has to get.,,LOL.... Nancy


Hello,
It was so nice to see the pictures of the ducks. I'm wondering if Scruffy was picked on because he was a different breed of duck and was trying to become part of their flock and they were driving him away. You may have helped him find a family. He sure looks fine now! Great job!

Grilled Asparagus Recipe

1 pound fresh asparagus
1 tablespoon olive oil
salt and pepper to taste

Preheat an outdoor grill for high heat. Trim bottoms of asparagus. Lightly coat the spears with the oil. Season with salt and pepper to taste. Grill over high heat for 2 to 3 minutes, or to desired tenderness.
Makes 4 servings

Mustard Greens Recipe

1/2 pound lean ham, or other pork, cubed
2 cups water
2 pounds mustard greens
1/2 teaspoon salt
crumbled bacon

Wash mustard greens 3 or 4 times in fresh water to clean. Drain each time.
Fry ham until chunks are brown.
Transfer cooked ham to large pot; add mustard greens and salt; bring to boil.
Cover; reduce heat and simmer 1/2 hour or until greens are tender.
Drain and save pot liquor to serve with greens or add to soups and stews for additional flavor. Garnish with bacon.
Makes 4 servings.

Oven Baked Potato Chip Potatoes Recipe

6 medium potatoes, peeled, and cut into inch cubes
3/4 cup crushed potato chips, divided
1/2 cup chopped onion
2 TBS melted butter
3/4 tsp salt
1/4 tsp pepper

In a bowl, combine the potatoes, 1/2 cup potato chips, onion, butter, salt and pepper; toss to combine. Transfer to a greased shallow 2 QT baking dish. Sprinkle with remaining potato chops. Bake, uncoverd, at 350*F for 40 to 50 minutes or until potatoes are tender. Serves 6

Early Peas with Honey Pecan Butter Recipe

3/4 lb. canned very young small early peas
2-1/2 tsp. unsalted butter
1-1/4 Tbs. honey
2 Tbs. plus 1 tsp. chopped pecans
Heat peas in a saucepan over medium heat. Drain well. Meanwhile, melt butter in a saucepan over medium heat. Stir in honey and pecans. Pour over peas and stir to blend.
Makes 4 Servings

Fried Corn and Onions Recipe

4 ears fresh corn
2 tablespoons butter
1 small sweet onion, diced
1 pinch salt and pepper to taste

Cut corn kernels from cob. Melt butter in a medium skillet over medium heat. Saute corn kernels just until tender, then mix in onion. Continue to saute until onion is just beginning to turn crispy. Season with salt and pepper.
Makes 4 Servings

Cheesecake For Two Recipe

Crust:
In a small bowl, combine 3 tbs. flour with 1 tbs. sugar and 1 tbs. butter. Rub with your fingers until completely mixed. Press into the bottom of a greased 4.5 to 5 inch round container. Bake at 325 for 15-20 minutes or until lightly browned. Remove from oven.

Cake:
Mash a 3-oz. pkg. of cream cheese and blend in 1 tbs. sugar, a pinch of grated lemon peel, 1/4 tsp. vanilla, and 1 egg. Mix well. Can do in blender or processor.
Pour into crust and bake at 325 for 15 minutes or until it appears set when light jiggled.
Mix 2 tbs. sour cream with 1 tsp. sugar (I use brown) and spread on the hot cheesecake. Cool to room temp and then chill.

Pecan Pie for Two Recipe

1 egg
1/4 cup sugar
1/3 cup dark corn syrup
2 tbsp butter or margarine
1/3 cup pecan halves
2 - 4 1/2 inch unbaked pastry shells

Beat egg thoroughly with sugar, salt, corn syrup, and butter, add pecans. Pour into pastry shells.
Bake at 350 for 40-45 minutes or till knife inserted between center and edge comes out clean.
Makes 2 Servings

Frozen Lemonade Squares Recipe

18 squares of cinnamon graham crackers, finely crushed (about 1 1/4 C.)
2 T. margarine or butter, melted
1 Qt. (4 C.) vanilla ice cream, softened
6 oz. (1/2 of 12 oz. can) frozen lemonade concentrate, thawed
1/2 C. Cool Whip (thawed)
fresh strawberries, cleaned (if desired, for garnish)

Mix graham cracker crumbs and margarine together. Press firmly onto
bottom of a 9 inch square pan. Beat ice cream and lemonade concentrate
together in a large bowl, with electric mixer on medium speed until well
blended; spread over crust. Freeze 4 hours or until firm. Cut into 9
squares to serve. Top each square with a dollop of Cool Whip; garnish
each square with a fresh strawberry to top Cool Whip. Makes 9 servings.

NOTE: Pour leftover lemonade concentrate into an ice cube tray and
freeze several hours or until firm. Add cubes to your favorite cold
drinks to keep them cold while adding a touch of lemon flavor.
