Baking Tips and Hints

When a cake recipe calls for flouring the baking pan, use a bit of the dry cake mix instead, no flour mess on the outside of the cake.

For perfect shaped cakes or jelly rolls, first grease the pan, then line it with greased waxed paper. After baking, invert pan and peel off the waxed paper. No more broken corners or edges! Great for fudges and bars!

To keep a cake from sliding on its plate during transit, drizzle a bit of frosting in a circle on the plate where the cake will rest before removing the cake from the pan. The frosting will hold the cake in place deliciously and your dessert will arrive in perfect shape.

To prevent icing from running off your cake, try dusting the surface lightly with cornstarch before icing.

Foil-line pans for baking bars. Once bars have cooled, you can lift the foil right out and cut the bars cleanly. There's an added bonus: The pans will need only a quick rinse and dry.

If you run out of cookie sheets while baking, spoon the remaining cookie dough on large sheets of lightly greased aluminum foil. When a cookie sheet becomes free, rinse it with cold water to cool, shake off excess water and lay the foil with the cookie dough right on the sheet.

Substituting applesauce for half of the amount of vegetable oil called for in your baking recipes will reduce the fat content. (Or use all applesauce, which produces a low-cal, moist product!)

If you're out of brown sugar, try substituting an equal amount of granulated sugar plus 1/4 cup molasses (light or dark) for every cup of white sugar.

Always bake bars on the middle rack in the oven and cookies on the top rack. If baking more than one pan at a time, place them at different angles on different racks to allow maximum circulation of heat. Alternate their placement on the racks halfway through the baking time.

Yeast will last longer than the specified date printed on the packet if kept in the refrigerator, or even longer in the freezer

If you add a pinch of baking powder to powdered sugar when making frosting, it will stay creamy and not harden or crack..

Any flavor mug cakes are fine. It's in the 100's outside and AC is working overtime so want a quick fix for my sweet tooth. thx in advance.

Another mug recipe!

1 Minute Cinnamon Bun Recipe

2 T. applesauce
1 T. vegetable oil
1 T. milk
1/4 t. vanilla extract
1/3 c. all-purpose flour
3 T. packed light brown sugar
1 1/4 t. ground cinnamon, divided
1/4 t. baking powder
1/8 t. salt

Cream Cheese Icing
1 T. cream cheese, softened
3 T confectioner's sugar
1 t. milk

Coat 8 oz. microwaveable mug with cooking spray. In small bowl, combine first 9 ingredients.
Reserve 1 T. batter in another small bowl & place remaining in mug. Add remaining cinnamon to 1 T. batter, then swirl mixture into batter in mug. Microwave 60-70 seconds, or until center is set. Cool 4-5 min. Remove to plate. In small bowl, combine icing ingredients, stirring until smooth. Spread on cinnamon roll & serve.

Olive Oil Bread Recipe

1/2 cup warm water (110 degrees F/45 degrees C)
2 1/4 teaspoons active dry yeast
1 teaspoon white sugar
1 teaspoon salt
4 tablespoons olive oil
2 1/2 cups all-purpose flour

In a large bowl mix together the warm water (110 degrees), yeast, sugar, salt, and olive oil. Stir in 2 cups of the flour in order to make a soft ball. Knead in additional flour so that dough is soft and not sticky. Place kneaded dough in a medium size greased bowl. Cover and let rise until doubled in size.
Punch down dough, and form into ball or loaf shape. Place onto a greased cookie sheet. Cover and let rise for 15 to 20 minutes. Preheat the oven to 375 degrees F (190 degrees C).
Bake in the preheated oven for 30 to 40 minutes, until golden brown.
Makes 1 loaf

Reuben Meat Loaf Recipe

1 cup soft rye bread crumbs
1/2 cup chopped onion
1/4 cup sweet pickle relish
1/4 cup Russian salad dressing
1 egg, beaten
1 Tbsp. Worcestershire sauce
1 tsp. salt
1/4 tsp. pepper
2 pounds lean ground beef
1 can (8 oz.) sauerkraut, drained,
finely chopped
1 cup shredded Swiss cheese

Heat oven to 350 degrees F. Mix all ingredients except beef, sauerkraut and cheese in large bowl. Add beef and mix well. On waxed paper, pat beef mixture into rectangle, 12 x 8 inches. Top with sauerkraut and 3/4 cup of the cheese. Using waxed paper to lift rectangle, roll up beef mixture jelly-roll style. Press ends to seal. Place roll, seam side down, in baking pan, 13 x 9 x 2 inches. Bake uncovered 50 minutes or until no longer pink. Sprinkle with remaining cheese. Bake 3 minutes. Garnish with chopped chives, stuffed olives and parsley.
Makes 8 servings

Chinese Pepper Steak Recipe

1 pound boneless beef sirloin or round steak
1 tablespoon plus 1/4 cup Kikkoman Stir-Fry Sauce, divided
2 tablespoons vegetable oil, divided
2 medium bell peppers, cut into 1-inch squares
2 medium onions, cut into 1-inch squares

Cut steak across grain into thin strips, then into 1-inch squares.
Coat with 1 Tbsp. stir-fry sauce.
Heat 1-Tbsp. oil in hot wok or large skillet over high heat.
Add beef and stir-fry about 1 minute; remove.
Heat remaining 1 Tbsp. oil in same pan.
Add peppers and onions; stir-fry 5 minutes.
Stir in beef and remaining ¼ cup stir-fry sauce.
Cook and stir just until beef and vegetables are coated with sauce.

Country Fried Steak with Sweet Onion Gravy Recipe

1 to 1 1/2 pounds thin round steak, cut into serving-size portions
1/4 to 1/2 cup shortening, for frying
1 cup flour, divided
1/4 cup cornmeal
1 1/2 teaspoons seasoned salt
2 large eggs
1 large sweet onion (Vidalia, Texas Sweet, Walla Walla, etc.), chopped
4 tablespoons butter, divided
1/4 cup flour
1 1/2 to 2 cups milk
1 teaspoon Wyler's Beef & French Onion Seasoning or beef bouillon granules, or to taste
salt and pepper to taste

In a medium skillet over medium-low heat, cook onion in 2 tablespoons of butter until very soft and golden in color, about 30 minutes. Set aside.
Put 1/2 cup flour in a shallow bowl. In another shallow bowl, put 1/2 cup flour, 1/4 cup cornmeal and seasoned salt. In a third bowl, beat eggs.

In a large skillet over medium heat, melt shortening. You should have about 1/4-inch of melted shortening.

Pound steaks to tenderize, then dredge each in flour, dip in egg mixture, then dredge in seasoned flour-cornmeal mixture. Place in hot oil and cook for about 3 minutes on each side, or until done. Remove steaks; keep warm. Pour off the shortening; add 2 tablespoons of butter and cooked onions. Stir until butter has melted; add flour. Stir flour and onion mixture until smooth; continue cooking for about 1 minute. Add 1 1/2 cups of milk gradually, stirring constantly. Continue cooking until mixture has thickened. If gravy is too thick, add more milk. Sprinkle with about 1/4 to 1/2-teaspoon Shakers or bouillon, then taste before seasoning with salt and pepper. Serve with mashed potatoes or rice.

Mountain Dew Apple Dumplings Recipe

Apple Dumplings
2 Granny Smith Apples, cut into 8 wedges each
2 cans Crescent Rolls
1 1/2 cups Sugar
1 can Mt. Dew
1 tsp. Cinnamon
2 sticks Butter, melted

Roll apple wedges in the crescent rolls to make 16 total. Spray a 13x9 pan with cooking spray. Lay crescent rolls in pan. Cut butter into 1/4" pads and lay on top of them. Sprinkle the sugar and cinnamon over the top and place in microwave until the sugar is dissolved. Pour the Mt. Dew over the top and bake at 350 degrees for about 45 minutes.

Mountain Dew Apple Dumplings Recipe



Sharon's Hominy Casserole with Fritos

2 (15.5 oz) cans hominy, (1 white and 1 yellow) drained
1/2 pound Velveeta cheese, cubed
1 can Cream of Mushroom soup
1 can Ro*Tel tomatoes and green chilies, DO NOT DRAIN
1 cup crushed Fritos, or crushed tortilla chips

Drain hominy well and put into buttered 2 quart casserole dish. In a
pan, combine cubed Velveeta cheese, Cream of Mushroom soup, and
Ro*Tel tomatoes and green chilies.
Let heat through until cheese is somewhat melted. Pour over top of
the hominy.
Sprinkle crushed Fritos® corn chips over the top. Bake at 350ºF. for
35 minutes.

NOTE: I like to use a combination of white and yellow hominy for
color, but that is only a personal preference. You can taste for
seasoning adjustment, but you probably don't need to add any extra
salt or pepper. Also you could use canned stewed tomatoes in place
of the Ro*Tel tomatoes and green chilies. And I guess if you just
hate Velveeta® cheese you could substitute mild cheddar cheese.

Print Sharon's Hominy Casserole with Fritos



Ranch and Bacon Hashbrown Bake Recipe

1-1oz pkg. Ranch salad dressing and seasoning mix
1 1/4 cups milk
3 oz cream cheese, softened
6 cups shredded hash browns
1 TBSP bacon bits
1/2 cup shredded cheddar cheese

In a blender, combine salad dressing mix, cream cheese and milk.
Blend until smooth and creamy. Pour over potatoes . Sprinkle with
bacon bits. ( I used a lot more than 1 TBSP) . Top with cheese. Bake
@ 350 for 35 minutes.

Apricot Empanadas Recipe

1 pie pastry
2 cups cooked dried apricots
1 cup sugar
1 tsp cinnamon
1/2 tsp ground cloves

Roll pastry 1/8" thick on lightly floured surface. Cut into 3 or 4" rounds.
Press apricots through sieve to puree if desired. Mix apricots with sugar,
cinnamon and cloves in bowl. Spoon apricot mixture onto pastry rounds;
fold over and seal edge. Place on baking sheet and bake at 425 degrees
until golden brown. Serve warm or cold. May sprinkle with sugar before
baking or garnish with confectioner's sugar glaze.

Blueberry Buckle Recipe

Sift in bowl:
4 cup flour
1 cup sugar
4 teaspoon baking powder
1/2 teaspoon salt

Add:
2/3 cup shortening
2 eggs
1-1/2 cup milk

Add 2 cups blueberries.
Mix all together and pour to large pan, 13x9x2 inches.

Cover with topping of:
1 cup sugar
4 tablespoon flour
4 tablespoon oleo (margarine)
2 teaspoon cinnamon

Bake at 375*F for 30 minutes. (Very good)
