Cold Ice Tea on a Hot day in Texas
 
It is a hot day here in Canyon, Texas. The temperaure is 104 and I have the air conditioner on full blast. Just got a glass of ice tea and now I am ready to compile the newsletter

This afternoon I have been chasing a fly around trying to kill it.  Since I am an old lady (75) my reflexes are what they used to be. Also it may have to do with the fact I have muscular dystrophy. I have been chasing this little pesky fly around long enough this afternoon I had time to name him. I chased Little Joe here and there. I chased him everywhere.  I finally killed Little Joe and was so proud of myself. I was smiling as I started on the newsletter and about 15 minutes later I noticed  Little Joe had brought his big sister with him on his afternoon outing to my house. So far Big Bertha has not lost her life yet but hopelfully her visit will end with a bang soon..

I was gifted a Ninja 5 in 1 Grill. I would like some ideas on using it. I did read somewhere that using olive oil with it would cause some smoking and using canola oil would be better. I have a Mister (sprays oil on food) and plan to use it. I understand the air fryer fries taste better when they have a tiny bit of vegetable oil and seasonings on them. In one of the videos on You Tube I saw where a small pan was used to cook veggies in it. Does anyone know where I can find one of those pans. I want to start using the Ninja 5 in 1 and try all the different functions on it. I feel the air fryer crisper will be what I use the most. I would love ideas of what you have used yours for and any tips and advice you can give me. ... Nancy



Hints and Tips

Keep flour fresh: To keep your bug free during the summer months, add a bay leaf to the container- its a natural insect repellent.

Potato salad helper: When boiling for salad, add a little vinegar to the water.The vinegar helps to keep the outside of the cooked potatoes firm,so they hold their shape better when cut.

Fast chopped scallions: Before chopping a scallion, make one slice
lengthwise from the root to the tip- you will cut twice as much.

Speedy mashed avocodos: Making guacamole? mash your avocados with a potato masher instead of a fork, to finish in half the time.

Flavorful salad dressing: Boost the taste of bottled vinaigrette salad
dressing by stirring in a few spoonfuls of fresh herbs or a minced clove of fresh garlic.

No cherry pitter: Hold a straw close to it's end,just push it through
the bottom of each cherry to force the pit out through the stem end.

If possible, cook stews and soups in advance then refrigerate and skim the fat off the top before reheating.

Use low-fat 1 or 2% milk when a recipe calls for milk.

Try low-fat or nonfat sour cream, yogurts, cream cheese, and cottage cheese in recipes calling for them.

Gingerbread Pancakes Recipe

1 cup flour
1 Tbs. sugar
1 tsp. baking powder
1 tsp ground ginger
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp cinnamon
dash ground cloves
2 Tbs. molasses
1 Tbs vegetable oil
1 cup buttermilk
1 egg, slightly beaten

In large bowl, combine all the dry ingredients. In a small bowl , whisk together the wet ingredients. Slowly pour the liquid mixture into the flour mixture and stir until just moistened. Lightly grease a griddle or pan over medium-low heat and cook the pancakes for about 3 minutes on each side. Makes 6 medium pancakes.

Cinnamon Syrup
1 cup sugar
1/2 cup light corn syrup
1/4 cup water
1/2 tsp. cinnamon
1/2 cup evaporated milk, undiluted

In medium saucepan, stir all ingredients together except milk. Sirring constantly, bring to a boil over mediumheat. Boil 2 minutes. Remove from heat, stir in milk. cool 30 minutes. Syrup will thicken as it cools.

Chocolate Cream Pie Recipe

3/4 cup white sugar
1/3 cup all-purpose flour
2 cups milk
2 (1 ounce) squares unsweetened chocolate
3 egg yolks
2 tablespoons butter
1 teaspoon vanilla extract
1 (9 inch) pie shell, baked

Combine sugar, flour, milk, and chopped up chocolate in 2 quart saucepan. Stirring constantly, cook over medium heat until mixture begins to bubble. Continue stirring for 2 minutes.
Mix a little of the hot mixture into the egg yolks, beating rapidly to avoid cooking the yolks. Stir the warm yolk mixture into the remainder of the chocolate mixture, and cook for an additional 90 seconds. Remove from heat, and stir in butter or margarine and vanilla.
Pour filling into pie shell, and chill until set. Top with whipped topping, and a little grated chocolate.
Makes 1 pie

Old Fashioned Vegetable Soup in a Crock Pot Recipe

2 lb. soup bones or 1 lb. beef short ribs
2 qt. water
1 tsp. salt
1 tsp. celery salt
1 sm. onion, chopped
1 c. carrots, diced
1/2 c. celery, diced
2 c. potatoes, diced
1 lb. can whole kernel corn, undrained
1 lb. can tomatoes or home canned, cut up
2 turnips, peeled and finely chopped

Place the meat, water, salts, onions, carrots and celery in crock pot. Cover and cook on low for 4-6 hours. Remove bones, chop meat and return to pot. Add potatoes, corn, tomatoes and turnips. Cover and cook on high for 2-3 hours more.
Serves 10-12.

Crock Pot Teriyaki Steak Recipe

2 to 2 1/2 lbs. boneless steak, cut up in small pieces
1 tsp. ginger
1 tbsp. sugar
2 tbsp. oil
1/2 c. soy sauce
1 garlic clove, crushed

Combine all ingredients and pour over steak. Cook on low 4 to 6 hours in crockpot. Serve over rice.
Makes 4 servings

Crock Pot Mushroom Smothered Steak Recipe

1 1/2 lb. steak, cut up
1/3 c. flour
1 tsp. salt
1/4 tsp. pepper
1 lg. onion, sliced
1 green pepper, sliced
1 lb. can tomatoes
1 can (4 oz.) mushrooms, drained
2 tbsp. molasses
3 tbsp. soy sauce

Put steak, flour, salt, and pepper in crockpot. Stir well to coat steak. Add remaining ingredients. Cover and cook on high 1 hour, then turn to low for 6 hours . Serve with rice.
Makes 4 servings

Medium Apple
Your favoriite flavor of Jello

Take apple, cut into chunks, mix in 2 tablespoons of your favorite jello.

Creamy Peach Freeze Recipe

1-3/4 oz Package whipped topping mix (I use 8ounce tub of Cool Whip)
16 oz Can sliced peaches; drained

Prepare whipped topping mix according to package directions. Combine whipped topping and peaches in container of electric blender; process until smooth. Spoon into 4 serving dishes, and freeze 2 to 3 hours or until firm. Remove from freezer 5 minutes before serving.
Makes 4 servings

Fruit Salad Recipe

3 cups low fat graham cracker crumbs
1 cup non fat yogurt
16 oz. fat free cream cheese
1/3 cup sugar
1 1/2 cups frozen strawberries
3 1/2 cups fat free Cool Whip
6 cups sugar free strawberry Jello (1 large and 1 small)

Preheat oven to 350 and spray a 9" X 13" pan with fat-free cooking spray.

Mix graham cracker crumbs and yogurt together. Spread evenly over bottom of pan. Bake for 15 to 20 minutes until crisp.
Prepare Jello according to directions on package, add frozen strawberries and put in refrigerator until it begins to set.
Mix cream cheese, sugar and 1/2 cup Cool Whip. Now start to layer the salad.

On top of the baked crust, spread the cream cheese mixture evenly. Set aside.

Once the Jello starts to set, put it over the cream cheese mixture. Return the pan to the refrigerator to allow Jello to set completely.
Top with remaining Cool Whip and garnish as desired. Garnish (banana & blueberries) not included in nutrient analysis
Makes 4 servings

Cherry Dumplings Recipe

2 c. sour cherries
2 tbsp. butter
2 tsp. baking powder
1 egg, beaten lightly
1 tsp. vanilla
3/4 c. sugar
1 c. flour
Pinch of salt
3 tbsp. shortening
1/2 c. milk

Cook cherries and sugar in pan for 3 minutes. Add butter. Mix remaining ingredients. Beat until smooth. Drop by teaspoons on cherry mixture and cook for 15 minutes, covered. Berries or other fruit may be used in place of cherries.

Fresh Fruit Sundaes Dessert Recipe

2 Tbs butter
1/4 cup packed brown sugar
2 cups sliced fresh peaches, plums, apricots, or strawberries
1/4 tsp ground cinnamon
Vanilla ice cream
1/2 cup toasted chopped walnuts or pecans

Heat the butter in a skillet over moderate heat and stir in the brown sugar until dissolved. Add the fruit and cinnamon and saute just until the fruit begins to soften, about 3 minutes. Spoon over scoops of vanilla ice cream and top with toasted nuts.
Serves 4 to 6.

Glazed Brussel Sprouts in Orange Sauce Recipe

3 medium oranges (such as blood and/or navel)
1 pound fresh Brussels sprouts (about 4 cups)
1 tablespoon margarine
2 teaspoons cornstarch
1/4 teaspoon dried thyme, crushed or five spice powder
1 tablespoon Dijon-style mustard

Finely shred portion of peel of one orange to make 1/2 teaspoon peel; set aside. Halve orange; squeeze juice. Working over a bowl to catch the juice, peel and section the remaining oranges; set aside. Combine the juices to get 1/3 cup (add water, if necessary). Rinse Brussels sprouts. Halve any large sprouts. In a medium saucepan cook sprouts, uncovered, in a small amount of boiling water for 10 to 12 minutes or until tender. Drain and transfer to a serving bowl. Gently stir in orange sections; cover and keep warm.
In the same saucepan melt margarine. Stir in cornstarch and thyme or five spice powder. Stir in reserved orange peel, orange juice, and mustard. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more. Transfer Brussels sprouts and fruit to serving bowl. Top with sauce; toss to serve. Makes 3-1/2 cups (6 side-dish servings).

Tempura Batter for Vegetables Recipe

1 C. flour
1/4 C. cornstarch
1 tsp. baking powder
1 tsp. salt
1 egg, slightly beaten
3/4 C. cold water
1/4 C. vegetable oil
Cayenne pepper, to taste (optional)

Mix together dry ingredients. Add egg, water and oil and cayenne pepper if desired. Stir to blend. Use to dip slices of yellow squash, zucchini, eggplant, green tomatoes, onion rings, mushrooms or fish fillets for frying. Fry in small bit of oil in skillet or wok on very high heat. Batter will keep, covered, in refrigerator for a few days.
Yields 2 cups.

Tempura Batter for Vegetables Recipe



Sauteed Vegetables Recipe

4 tsp butter
2 onions, sliced
1 clove garlic, crushed
4 tomatoes, quartered
1 green pepper, sliced
2 stalks celery, chopped
2˝ Tbs chopped parsley
Salt and pepper

Melt butter in a frying pan. Sauté onion and garlic until onion is transparent. Add tomatoes, green pepper, celery, and parsley. Cover and simmer until vegetables are tender but not soft. Season to taste with salt and pepper.
Serves 4.
