Hi, does anyone have a recipe for cornbread that is made with a yellow cake mix and I think the Jiffy brand corn bread mix.  Ana

Applesauce Jello

1 (3 oz.) pkg. lemon or lime Jello
1/2 c. boiling water
1 c. applesauce
1/2 c. ginger ale or 7-Up or any lemon-lime soft drink

Dissolve Jello in boiling water. Add applesauce and 7-Up. Chill.

Strawberry  Pie

2 c. flour
1 c. softened butter
1/2 c. powdered sugar

Mix together well and spread in jelly roll pan. Bake until edges are lightly browned (350 degrees about 20 minutes). 8 oz. softened cream cheese
3/4 c. sour cream

Mix together well and spread over cooled crust. Top with sliced strawberries then glaze.

1 cup strawberry juice, mix with 1-2 tablespoons cornstarch, cook until thick. Sweeten to taste and pour over sliced strawberries.

Dried Apples Pie

1 lb. dried apples
1 1/2 c. brown sugar (may use half white)
1/8 tsp. salt
1 1/2 tbsp. cinnamon
1/4 tsp. nutmeg (optional)

May also add 1 tablespoon margarine and 1 tablespoon lemon juice. Cover apples with cold water and soak overnight. Using the same water (more if necessary) cook apples until tender. Add sugar, salt, cinnamon and nutmeg. Continue to cook until thick, stirring frequently. Fill pie crust, cut vent in top crust. Bake at 350 to 375 degrees for about 50 minutes, or until crust is brown and the apples "ooze" from the vents. Some recipes I have for dried apple pie call for cloves and allspice, 1/4 teaspoon for each pie plus the cinnamon and nutmeg.

Easy Broccoli Soup

2 cans cream of celery soup
1 (18 oz.) jar of Cheez Whiz
1 pt. half and half
1 (20 oz.) bag of broccoli

Combine ingredients in crockpot. Cook on low for67 hours.

Beef and Macaroni Casserole

2 c. macaroni
1 lb. ground beef
1 chopped onion
1 can Mexicorn, do not drain
2 cans tomato soup

Cook macaroni until tender; drain. Brown ground beef and onion. Add corn and soup. Bring to a boil. Mix in macaroni. Serve.

Black Eyed Pea and Beef Dish

1 lb. ground beef
1 1/4 c. chopped onion
1 c. chopped green pepper
2 (16 oz.) cans black-eyed peas, drained
1 (16 oz.) can whole tomatoes, undrained & chopped
1/4 tsp. salt
1/2 tsp. pepper
1/3 c. catsup (optional)

Cook ground beef, onion and green pepper over medium heat, until beef is browned. Drain grease. Add remaining ingredients and bring to boil. Reduce heat and simmer for 30 minutes, stirring often. Serves 6.

Zucchini Lasgna for Two

1/2 lb. lean ground beef
1/3 c. chopped onion
1 jar (16 oz.) spaghetti sauce
4 med. size zucchini
1 egg
1 container (8 oz.) creamed cottage cheese
2 tbsp. flour, divided
1/4 lb. mozzarella cheese, shredded
1/2 c. toasted bread crumbs

Place beef and onion in a 2 quart casserole. Microwave uncovered on high for about 5 minutes or until done. Drain off excess fat and juice. Stir in spaghetti sauce. Microwave uncovered on high for 5 minutes. Let stand while assembling other ingredients. Slice zucchini lengthwise into 1/4 inch slices. In a bowl, beat egg and stir in cottage cheese until well mixed. In bottom, of greased 12 x 8 x 2 inch glass baking dish arrange one layer of zucchini slices. Sprinkle with 1 tablespoon of flour. Top with cottage cheese mixture and half of meat mixture. Repeat with remaining zucchini, flour and meat mixture. Cover with waxed paper. Microwave on high for 18-19 minutes, giving dish half turn after 8 or 9 minutes. Combine mozzarella and bread crumbs and spread over top. Microwave for 2 minutes.
Makes 2 servings.

Green Chili Roast

1 med. pork roast
1 lg. can green chilies, not pickled
1 lg. can tomatoes
1 lg. Onion
1/2 - 1 sm. can hot jalapenos, diced (optional)

Cover roast with water in crockpot and simmer overnight or approximately 8 hours. Let cool. Take meat off bone and separate into smaller pieces. Add meat, tomatoes, chilies and diced onions to the broth. Add approximately 2 teaspoons salt and 1/2 teaspoon pepper. Let simmer another 8 hours. Thicken with flour and water. Let set overnight in refrigerator. Serve the next day alone, with tortillas or over burritos.

Crock Pot Spare Ribs and Cabbage

4 or 5 southern style spareribs
1/2 head cabbage
4 potatoes
4 to 6 carrots
1 can tomato sauce (12 or 16 oz.)

Turn slow cooker or crockpot. In fry pan, brown spareribs. Cut off excess fat. Peel potatoes and carrots. Cut potatoes into quarters and add to crockpot. Cut carrots into 3 inch chunks and add to crockpot. Cut cabbage into 3 or 4 large chunks. Place on top of mixture. Place spareribs on top. Pour tomato sauce directly over mixture allowing it to drip through the vegetables. Make sure the cover of crockpot is evenly sealed (take out some cabbage if you must). Cook on high about 30 minutes; then slow cook on low 6 to 8 hours, or until cabbage and carrots have cooked through. Serve hot and add margarine and salt and pepper to taste, if desired.

Chunky Applesauce

8-10 lg. cooking apples, peeled, cored & sliced or cut in chunks
1/2 c. water
1 tsp. Cinnamon
1/2-1 c. sugar

Put all ingredients into crockpot or slow cooker. Cover and cook on low heat 6-8 hours. (High 3-4 hours.) Serve applesauce warm with or without cream.

Easy Chicken and Dumplings

2 pkgs. flour tortillas, cut in strips
1 to 2 cans of cream of chicken soup
1 chicken with broth
Mrs. Dash to taste
Yellow food coloring, if desired

Boil chicken in 6 to 8 cups of water. Remove chicken from broth and debone, saving broth. Bring broth to a boil and drop in a layer of tortillas and a layer of chicken until all are in the broth. Add soup (2 cans for a thicker mixture), seasoning, and a little food coloring, if desired (just for a more authentic appearance). Cook to desired consistency. Yield: 4-6 servings.

Hawaiian Orange Cake

1 pkg. yellow cake mix with pudding
1/2 c. oil
4 eggs
1 sm. can mandarin oranges, undrained

1 (8 oz.) container Cool Whip
2- 1/2 c. well drained, crushed pineapple
1 sm. box instant vanilla pudding mix

Beat cake mix, oil, eggs and oranges for 2 minutes. Bake in a 9 x 13 inch pan in a 350 degree oven for 30 to 40 minutes. Let cool.

Frosting: Mix all together with a spoon. Spread over cooled cake. Decorate with flaked coconut and orange slices. Refrigerate. Serves 12.

Cherry Pudding

1/2 c. sugar
1/4 c. margarine or butter
1 egg
1/2 c. milk
1-1/2 c. flour
1-1/2 tsp. baking powder
Pinch salt
2 c. sour cherries or 1 can sour cherries

Cream sugar and margarine; add egg, then milk. Sift together flour, baking powder and salt; add to above mixture. Stir in cherries. Bake in greased and floured 8x8 inch pan at 350 degrees for 1 hour. If canned cherries are used, drain and use juice to make sauce for puddings, ice cream, etc. (Cook juice; add cornstarch mixed with small amount of water; cool. Can be used within a week.)

Blackberry Puddings

1 c. sugar
1/3 c. margarine
2 c. flour
2 tsp. baking powder
1 tsp. salt
1 c. milk
2 to 3 c. blackberries
2 c. boiling water

Mix well. Pour in greased 9x13 inch pan. Sprinkle with 1 cup sugar. Add: Bake 50 minutes at 350 degrees.
