I have a lot of recipes that need 1 can cherry, blueberry, apple, peach and other fruits pie filling; in Portugal we don't have canned pie filling but I'd like to try the recipes; maybe you can teach me how to make fruit pie fillings by myself. I'd like to know the weight of the most common canned pie filling too.

I once had a cake recipe that has a dry mix cake, jello powder and other ingredientes, all mixed, end then it went to bake. It's not the Poke Cake, because the jello went withe the cake batter in the oven to bake; does anybody know that kind of recipe?

Christina's Easy One Skillet Dinner Recipe

4-6 pork chops
2/3 c. uncooked rice
1-1/4 c. water
1 can whole corn
1 can diced tomatoes
salt and pepper to taste

Brown chops, then lay them aside.
Pour out extra grease from pan. Put rice and water in same skillet and lay pork chops on to of rice; let simmer until rice is done. Drain can of corn and pour over chops. also add the diced tomatoes, salt and pepper to taste. Heat until all is hot.

Hi Nancy:
If you like spicy food, this is a great recipe. It is probably good without the pepper flakes, but I have not made it that way. It is a little heavy so we don't have it very often - but we do love it! I adapted it several years ago from a recipe at www.pandpkitchen.com.

Wicked Chicken Recipe

2 skinless boneless chicken breasts
2 Tblsp. butter
4-1/2 oz. mini penne or mini shells (about 1-1/4 cups)
15 oz. Alfredo sauce
Salt and pepper
Garlic powder
1/8 tsp. crushed red pepper flakes (or to taste)
Grated Parmesan

While the pasta is cooking, season the chicken with salt, pepper, and garlic powder; melt butter in a large skillet and cook chicken for about 3 minutes on each side, until nicely browned. Remove chicken from skillet and slice; return to the skillet and sprinkle the chicken with red pepper flakes to taste.
Add the cooked pasta to the skillet and stir in the Alfredo sauce until combined. Transfer to a lightly greased 1-1/2 qt. baking dish. Sprinkle with a little grated Parmesan.
Bake at 350 degrees for 30 minutes.

Cathy's Citrus Salad Recipe
(4 servings)

1 large ripe avocado
Lemon Juice
2 oranges, peeled, pitted, and sectioned
2 grapefruit, peeled, pitted, and sectioned
Bibb lettuce

Cut avocado crosswise in half; remove pit. Peel off skin and cut into 1/4 inch slices. Sprinkle slices with lemon juice. Arrange avocado slices and fruit sections on lettuce.

Nutritional analysis of 1 serving:
Calories 220; protein 2g; fat 8g; carbohydrate 16g; sodium 0mg; cholesterol 0 mg;

Ana's Dried Apple Pie Recipe

1 lb. dried apples
1 1/2 c. brown sugar (may use half white)
1/8 tsp. salt
1 1/2 tbsp. cinnamon
1/4 tsp. nutmeg (optional)

May also add 1 tablespoon margarine and 1 tablespoon lemon juice. Cover apples with cold water and soak overnight. Using the same water (more if necessary) cook apples until tender. Add sugar, salt, cinnamon and nutmeg. Continue to cook until thick, stirring frequently. Fill pie crust, cut vent in top crust. Bake at 350 to 375 degrees for about 50 minutes, or until crust is brown and the apples "ooze" from the vents. Some recipes I have for dried apple pie call for cloves and allspice, 1/4 teaspoon for each pie plus the cinnamon and nutmeg.

Susan's Squash Casserole Recipe

2 pounds yellow squash or zucchini
1 large onion
1 tablespoon light margarine
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup low fat mozzarella cheese
1 tomato cubed

Slice saute squash and onion in margarine in a nonstick skillet until barely tender. Add seasonings and continue to cook until vegetables are soft. Toss with tomato just before serving.

Lisa'a Corn Pudding  Recipe

One 16 ounce bag of frozen corn
1/2 cup egg substitute
1 1/2 cups skim milk
1/4 cup sugar (or sugar substitute)
1/4 teaspoon salt

Pour all ingredients in to blender. Blend until slushy. Poor into a 2 quart casserole dish which has been sprayed with PAM, regular. Bake for about 1 1/4 hours in a pan of hot water or until the corn pudding has the consistency of custard (insert knife in middle of pudding and if it comes out clean it is done.)

Linda's Apricot Pie Recipe #1

17 or 19 oz. can apricots, drained, save juice
1/2 c. sugar
2 tbsp. Cornstarch
1/2 stick margarine or butter
1 sm. box apricot Jello

Mix sugar and cornstarch together, and heat juice to lukewarm, add enough juice to sugar, cornstarch mixture to make thin paste. Add this to warm apricot juice and cook until clear. Add oleo and Jello. Dash of salt if you wish, and add to apricots and put in 8 inch uncooked double crust pie shell, and bake until brown in 350 degree oven. Use peach Jello for peach pie or strawberry Jello with corresponding fruits for different types of pies.

Linda's Apricot Pie Recipe #2

1 pkg. dried apricots, cooked and drained
2 cans apricots
2/3 to 1 c. sugar
2 tbsp. Flour
5 tbsp. orange juice
1/2 tsp. almond extract

Use your favorite pie crust. Add above mixture. Bake 10 minutes in 450 degree oven then 10 to 20 minutes in 350 degree oven.

Linda's Apricot Pie Recipe #3

1 can (10 biscuits) biscuits
1 (14 ounce) can peeled apricot halves
3 tbsp. flour
3 tbsp. brown sugar
1/4 c. honey

Pour apricot juice into small saucepan; reserve drained apricots. Add flour and sugar to juice; place over medium heat; cook, stirring constantly, until mixture thickens. Remove from heat. Place apricot halves in oblong glass baking dish, 10 x 6 x 1-1/2 inches. Pour cooked juice over apricots. Arrange biscuits over apricots. Pour 1/2 teaspoon honey over each biscuit. Bake in 350 degree oven for about 25 minutes or until biscuits are brown.

Macaroni And Cheese Recipe

1 Pound Velveeta Light Pasteurized Process Cheese, cut up
1/4 Cup milk
2 Cups elbow macaroni - (8 oz), cooked
1 Dash freshly-ground black pepper

Stir Velveeta Light and milk in saucepan on low heat until smooth. Stir in macaroni and pepper. Spoon into 1-quart casserole.

Bake at 350 degrees for 20 minutes.
This recipe yields 4 servings.
This recipe was found in an ad for Velveeta in 1971.

Sharon's Easy Stuffed Manicotti Recipe

1 box manicotti noodles
1 can Hunts spaghetti sauce
8 oz. ricotta cheese
8 oz. shredded mozzarella cheese
1/4 c. Italian bread crumbs

Boil noodles; drain. Mix cheeses and bread crumbs. Stuff noodles with mixture. Pour spaghetti sauce on top of stuffed noodles. Bake at 350 degrees for about 45 minutes.
Makes 4 servings

Jenna's Oriental Barbecued Chicken Recipe
Makes 4 Servubgs

4 skinless, boneless chicken breast halves (about 1 pound)
1/2 cup Hoisin sauce
1 tablespoon sesame oil
1 tablespoon tomato paste
1/2 teaspoon ground ginger
2 cloves garlic, crushed

Set oven control to broil. Trim fat from chicken breast halves; place on rack in broiler pan. Mix remaining ingredients; brush on chicken.

Broil with tops about 4 inches from heat 7 to 8 minutes or until brown; turn. Brush with sauce. Broil 4 to 5 minutes longer or until chicken is done. Heat remaining sauce to boiling. Serve over chicken.

Sharon's Easy Eclairs Recipe

1 can biscuits (10 in a can)
several individual containers of vanilla Snack Pack pudding
1 can chocolate frosting

Bake biscuits according to pkg. directions. Let cool. Pull biscuits apart and spread vanilla pudding in center. Put top back on and spread chocolate frosting on top
