Requests, Recipes, and Comments

In the June 4, 2020 Newsletter Ana requested a recipe for cornbread that is made with a yellow cake mix and Jiffy Cornbread mix. I think this might be what she is looking for.
It is from one of their old free recipe booklets that you can order from It is called Corn Cake. Ana can still check out the Jiffy website and she can order a free recipe book from them.
They have a lot of recipes on the website.

Corn Cake Cornbread Recipe

1 (8.5 oz) box Jiffy Corn Muffin Mix
1 (9 oz) box Jiffy Golden Yellow Cake mix
2 eggs
3/4 cup milk

Preheat oven to 350 F. Grease a 13 x 9 inch pan. In a bowl combine all ingredients. Beat for 3 minutes.
Pour into pan. Bake 20 to 25 minutes.

Roasted Carrots Recipe
Heat oven to 450F. Peel 2-1/2 lbs carrots;halve crosswise, and halve thick endslengthwise. On a rimmed baking sheet, toss with 2 Tbsp olive oil, then any dry spices (if using) and 1/2 tsp each kosher salt and pepper. Transfer half to a second sheet, reduce ovento 425F, and roast until golden brownand tender, 25 minutes.

Golden Raisin Vinaigrette
Bring 1/2 cup vinegar to a boil. Remove from heat and add 1/2 cup golden raisins; let sit 15 minutes. Transfer raisins to a cutting board and chop; reserve vinegar. In a bowl, toss chopped raisins with 2 Tbsp olive oil and 1 Tbsp reserved vinegar, then 1⁄4 cup chopped pistachios and 2 Tbsp chopped chives. Spoon over roasted carrots

Jenna's Potato Salad

3 pounds red potatoes, cubed (about 10 cups)
1/3 cup olive oil
2 tablespoons lemon juice
2 tablespoons red wine vinegar
1-1/2 teaspoons salt
1/4 teaspoon pepper
2 tablespoons minced fresh parsley
1 garlic clove, minced
1/2 teaspoon dried oregano
1/2 cup pitted Greek olives, chopped
1/3 cup chopped red onion
1/2 cup shredded Parmesan cheese

Place potatoes in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 10-15 minutes or until potatoes are tender. Drain; transfer to a large bowl. In a small bowl, whisk oil, lemon juice, vinegar, salt and pepper until blended; stir in parsley, garlic and oregano. Drizzle over potatoes; toss to coat. Gently stir in olives and onion. Refrigerate, covered, at least 2 hours before serving. Just before serving, stir in cheese.

Vinegar Cucumber Salad

3 medium cucumbers, sliced
1 cup sugar
3/4 cup water
1/2 cup white vinegar
3 tablespoons minced fresh dill or parsley

Place cucumbers in a 1- to 2-qt. glass container. In a jar with a tight-fitting lid, shake remaining ingredients until combined. Pour over cucumbers. Cover and refrigerate overnight. Serve with a slotted spoon. ... Jenna

Easy Frozen Grapes

Green or red seedless grapes

Wash grapes and remove stems. Drain on paper toweling. Freeze in a single layer. When frozen, transfer to plastic bag or other container. A frosty treat for a hot summer day!
Great for a snack to cool you off.

Linda's Fruit Kabobs

3 pears, cored; cut wedges
3 apples, cored; cut wedges
24 seedless green grapes
24 watermelon cubes
8 oz. carton fruit flavored yogurt
Lemon juice
3 plums, pitted; cut wedges
24 seedless red grapes
8 oz. pkg. cream cheese

Dip pear and apple wedges in lemon juice to prevent discoloration. On wooden skewers, place fruit in contrast in shape and color. Refrigerate until serving. Serve with Frosty Fruit Dip: Combine softened cream cheese and yogurt, blend well. Store tightly covered in refrigerator.

Susan's Lemon Sherbet

1 can evaporated milk, 14 1/2 oz.
1 can frozen lemonade
1/3 c. sugar

Chill 1 can evaporated milk, 14 1/2 ounce. Chill bowl and beater. Beat milk to consistency of whipped cream.
Blend in 1 can frozen lemonade, 1/3 cup sugar. Beat thoroughly. Freeze. No further mixing is needed during freezing. Place in ice cube trays (metal ones) and freeze overnight.

Jello Orange Creamsicles

2 pkgs. (sm.) orange fruit flavored Jello
2 (8 oz.) containers orange or vanilla low-fat yogurt

Prepare the gelatin as per package directions. Chill 45 minutes or until partially set (soft set). Stir in the containers of yogurt. Beat briefly with beaters or wire whisk. Chill until set (3-4 hours). Serve in parfait glasses with mint sprig garnish.

Susan's Frozen Pops Snack

2 c. plain yogurt
1/2 c. pineapple, crushed
1 (6 oz.) frozen orange juice concentrate, thawed
7 paper cups or popsickle holders

Mix together: yogurt, pineapple, orange concentrate until blended. Spoon into paper cups or popsickle holders. Freeze about 4 hours or until solid.

Susan's Fudgesicles

1 (4 oz.) pkg. instant chocolate pudding mix
2 c. milk
1/4 c. sugar
1 c. canned evaporated milk

Blend well. Pour into cups for freezing. Add popsicle sticks when mixture starts to freeze. Serves 6.

Any Flavor Popsicles

1 lg. pkg. Jello
1-1/2 c. hot water
1 pkg. Kool-Aid, same flavor as Jello
1 c. sugar
2-1/2 c. cold water

Dissolve Jello in 1 1/2 cups hot water. Add Kool-Aid, sugar and 2 1/2 cups cold water. Pour into molds and freeze.

Easy Frozen Banana Treats

6 popsicles sticks
6 ripe bananas
1 pkg. real chocolate chips
1 c. crushed peanuts

Peel bananas. Put popsicles sticks through bananas. Dip banana in melted chocolate and roll in salted crushed peanuts and freeze.

Susan's Frozen Fruit Salad

1 tsp. maraschino cherries, chopped
1/3 c. chopped nuts
2 c. sour cream
1/2 c. sugar
1 tsp. lemon juice
1/8 tsp. salt
1 sm. can crushed pineapple, well drained
1 banana, chopped fine

Combine ingredients, blending well. Pour mixture into paper-lined muffin tins and freeze. Remove from muffin tin and store in a plastic freezer bag. Makes 12 to 13 individual salads or desserts.
