Crock Pot Chili Chicken Recipe

1 pkg. corn tortillas, cut into bite size pieces
2-4 c. cooked, boned chicken
1 can cream of chicken soup
1 can cream of mushroom soup
1 can chili (with or without beans)
12 oz. can chicken broth
1 or 2 cans sm. green chilies, diced

Stew and bone chicken. Cut into bite size pieces. Mix together chili, chicken broth, soups and green chilies. Layer sauce, tortillas and chicken. Bake 30 minutes at 350 degrees. Top with cheese the last 5 minutes. May be made in crockpot or microwave (decrease liquid to at least half.) Serves 6-8.

Chicken and Vegetables Recipe

1 lb. boneless & skinless chicken breasts
3-4 carrots, sliced
Broccoli
1 can cream of mushroom soup
1/4 soup can water

Slice carrots and place in bottom of crockpot. Cut broccoli into 2 inch lengths, add to carrots. Lay chicken on top and layer with mushroom soup and 1/4 soup can of water. Cook 2 1/2-3 hours on high.

Brenda's Crock Pot Roast Recipe

3 to 4 lbs. brisket, rump roast, or pot roast
2 to 3 potatoes, pared and quartered
2 to 3 carrots, pared and thinly sliced
1 onion, peeled and quartered
Salt and pepper to taste
1/2 c. water
Put vegetables in bottom of crockpot. Salt and pepper meat, then put in pot. Add liquid. Cover and cook on low 6 to 8 hours. Remove meat and vegetables with spatula.

Brenda's Sweet and Sour Beef Recipe

1 lb. ground beef
16 oz. combination frozen broccoli carrot and cauliflower
1 tbsp. brown sugar
1/2 tsp. ginger
1/4 tsp. garlic powder
1/8 tsp. pepper
8 oz. can pineapple tidbits in its own juice, drained (reserve liquid)
2 tbsp. soy sauce
1 tbsp. vinegar
1 tbsp. cornstarch
2 tbsp. water
Hot cooked rice

In large skillet, brown ground beef; drain. Stir in vegetables, brown sugar, ginger, garlic powder, pepper, reserved pineapple liquid, soy sauce and vinegar. Blend well. Bring to a boil; reduce heat. Cover, simmer for 4-8 minutes or until vegetables are crisp-tender. Stir in pineapple. In small bowl, combine cornstarch and water; blend until smooth. Gradually stir into hot mix in skillet. Cook, stirring constantly, until thickened. Serve over hot cooked rice.

Here is another recipe I have made recently. Meat costs have gone up so much lately. I have been trying to feed my family recipes that are tasty and filling. This is another recipe I cut out of a magazine years ago. It has been many years since I have made it. My family said it was a winner. ... Brenda

Brenda's Microwave Spaghetti Dish

1 lb. ground beef
1 (15 1/2 oz.) jar spaghetti sauce (I use chunky vegetables)
1 c. water
1-1/2 c. uncooked spaghetti
1 c. Mozzarella cheese, shredded

Crumble beef in 3 quart casserole. Cook on full power 4 to 5 minutes or until beef is no longer pink, stirring and rotating dish if need be. Half through cooking time, drain beef. Mix in sauce, water, and macaroni. Cook, covered, at full power 12 to 14 minutes until macaroni is tender (you may have to add time if microwave is less than 700 watts), stirring and rotating dish half way through. Sprinkle cheese on top of casserole. Let stand, covered, 4 to 6 minutes before serving. Makes 6 servings.

Ranch Beans and Rice Recipe

1 lb. ground beef
1 can cheddar cheese soup
1 (14 ounce) can Ranch style beans
1 (14 ounce) can Spanish rice

Brown the ground beef; drain. Preheat oven to 350 degrees. Combine ground beef and all other ingredients. Bake in a 9 1/2" x 11" casserole dish for 35 minutes. May be served with toast or tortilla chips.

Susan's Chicken Casserole Recipe

1 c. chicken breast, diced and cooked (I use canned chicken breast)
1 can cream of chicken soup
1 c. sliced almonds
1/2 c. mayonnaise
1 c. celery, chopped
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. lemon juice
3 eggs, hard-boiled
1 c. cracker crumbs
2 1/2 tsp. butter

Mix together cracker crumbs and butter; set aside. Combine chicken, chicken soup, almonds, mayonnaise, celery, salt, pepper, eggs and lemon juice. Grease a deep casserole dish and pour mixed ingredients in alternating layers with 3/4 cup of buttered cracker crumbs. Bake at 400 degrees for 20 to 30 minutes or until bubbly. Cover with remaining buttered crumbs and brown. Serves 6.

My family loves Jello. I love to make salads with Jello. This is one of our favorites. ... Ana

Ana's Veggie Jello Salad #1 Recipe

1 small package lemon or lime Jello
1/2 cabbage, shredded or chopped
1-2 carrots, shredded or chopped
1-2 stalks celery, shredded or chopped
1 apple, chopped

Prepare Jello as to package directions. When cool, add the shredded or chopped vegetables and apple. Pour into dish or mold. Chill and unmold. This salad is so good on a hot day.

Veggie Jello Salad #2 Recipe

1 lg. pkg. lemon Jello
1/2 c. fine grated carrots
1/2 c. finely cut half moon shaped celery
1/2 c. SMALL green peas (I like frozen green peas, thawed
1 tsp. Vinegar

Dissolve Jello per instructions, for firmer Jello omit 1/4 c. water. Add 1 teaspoon vinegar when Jello starts to firm up good, fold in veggies. Place small sprigs of celery leaves on top for garnish or parsley.

Ana's Red Hots Jello Salad Recipe

1/4 c. red hot candies
1 c. boiling water
2 c. applesauce
1 (3 oz.) box cherry jello

Melt redhot candies in boiling water. Add jello and applesauce. Chill overnight or for several hours.

Fresh Green Beans and Red Potatoes Recipe

1-1/2 lbs. fresh green beans
2 slices bacon, quartered
1 sm. onion, chopped
5 c. water
1 tsp. salt
1/2 tsp. pepper
1 1/2 c. cubed red potatoes

Wash beans. Trim ends and remove strings. Cut into 1-1/2-inch slices; set aside. Fry bacon until crisp in a Dutch oven. Remove bacon and set aside. Saute onion in drippings until tender. Add water to cover. Bring to a boil; add bacon, beans, salt, pepper and return to a boil. Cover and simmer 15 minutes. Add potatoes and cook 10 minutes or until potatoes are tender. 6 servings.

Lisa's Southern Style Green Beans Recipe

3/4 c. onions, chopped
2 slices bacon
2 tbsp. flour
1/2 tsp. salt
1/4 tsp. dry mustard
1 can stewed tomatoes
2 c. green beans, cooked
2 tbsp. brown sugar
1 tbsp. Worcestershire sauce

Cook bacon, add onions and cook until tender. Blend in pan with bacon and onion, flour, sugar and tomatoes. Cook until thick. Add green beans and heat. Put in casserole on low temperature oven until ready to serve.
