Eggs were on sale this week. I loaded up on them and then had to find some ways to use them. Here are some of my favorite recipes for eggs.

Deviled Eggs Recipe

1 doz. boiled eggs, cooled
1 med. onion, chopped
3/4 c. mayonnaise (more or less to taste)
2 tbsp. mustard (more or less to taste)
1/8 tsp. paprika (more or less to taste)

Peel and wash eggs. Cut lengthwise in half. Put yolks into medium size bowl. Smash with fork. Add mayonnaise, mustard and onion. Mix well. Fill egg white halves with mix. Sprinkle with paprika. Makes 24 halves.

Red Beet Eggs Recipe

2 doz. eggs, boiled and peeled
2 cans red beets
1-1/2 c. sugar
3/4 c. vinegar
2 cinnamon sticks

Pour over eggs and let stand for 24 hours or more.

French Fried Deviled Eggs Recipe

6 eggs, hard boiled
1 tsp. Worcestershire sauce
1 tsp. dry mustard
1/2 tsp. Salt
1/2 tsp. white pepper
1/8 tsp. Tabasco sauce
1 tbsp. sweet relish
3 tbsp. Mayonnaise
2 egg yolks
Sifted flour
Fine bread crumbs

Cut eggs lengthwise. Remove yolks and mash with fork. Add with sauce, dry mustard, salt, pepper, Tabasco sauce, relish and mayonnaise. Blend well. Stuff whites and put eggs back together and hold with toothpicks. Dip eggs into 2 beaten egg yolks, then flour and bread crumbs. Fry in deep fat until golden brown. Drain eggs on brown paper and remove toothpicks. Parmesan cheese does wonders for scrambled eggs. Sprinkle on it while eggs are cooking. Likewise Tabasco added to eggs while beating them is a wonder worker as to the flavor.

Pennsylvania Dutch Pickled Eggs Recipe

12 eggs, hard boiled and peeled
1 qt. sliced beets
1 1/2 c. cider vinegar
1 tsp. Salt
1 onion, sliced
1 1/2 c. sugar
1 tsp. Cloves

Place eggs in glass jar or bowl. Combine all together ingredients in saucepan and bring to a boil. Cook gently until sugar dissolves. Pour hot ingredients over eggs. When cool, store in refrigerator. Eggs are pickled in 24 hours.

Jenna's Cottage Cheese and Orange Jello Salad Recipe

1 (12 oz.) sm. curd dry cottage cheese
1 (8 oz.) container Cool Whip
1 can mandarin oranges
1 (3 oz.) box orange Jello

Put cottage cheese in small mixer bowl. Fold in Cool Whip. Add Jello and stir well. Drain oranges, put about 1/2 of oranges in mixture; stir. Mound cheese mixture on large plate. Put remaining oranges on top and around base of cheese. Keep in refrigerator until serving. Serves 4 to 6.

Several days ago I started looking for one of my favorite recipes for summer. I has carrots, cauliflower and some other vegetbles in a vinegar solution. It also was spicy and hot like it had some sort of hot peppers in recipe. Can someone help me with this recipe.

Linda's Refrigerator Pickles

6 c. sliced cucumbers
1 c. slice onion
1 c. green pepper (optional)
1 c. vinegar
2 c sugar
1 tbsp. salt
1 tsp. celery seed

Combine all ingredients; mix well. Place in jar, refrigerate. The pickles will be ready in 24 hours and will keep up to 1 year.

Caramel Custard Flan Recipe

1/3 c. sugar
2 eggs
1 (13 oz.) can evaporated milk
1/4 c. sugar
1 tsp. vanilla
Dash of salt

In small skillet, heat and stir 1/3 cup sugar over medium heat until sugar melts and becomes golden brown. Quickly pour into 3 cup ring mold, tilting to coat bottom and sides. In bowl, heat eggs, stir in milk, sugar, vanilla and salt. Add to mold. Set mold in baking dish with 1-inch water. Bake 325 degrees for 50 minutes or until knife comes out clean.

Favorite Homemade Ice Cream Recipes

Brenda's .Rice Pudding

3/4 c. rice, cooked
3 eggs, beaten lightly
3/4 c. sugar
2 c. milk
1 tsp. vanilla

Pinch of cinnamon Mix all ingredients together; place in casserole dish. Heat 1/4 cup margarine and pour over mixture. Bake at 350 degrees until solid and lightly brown.

Homemade French Vanilla Ice Cream Recipe
Makes 1-1.5 quarts

5 egg yolks
2/3 cups sugar
1 cup half and half
2 tablespoons butter
1 cup whipping cream
2 teaspoons vanilla extract

Beat yolks and sugar until blended. Pour in top of double boiler. Stir in half and half. Cook and stir over boiling water until thickens. Set aside - stir in butter. While cooling on a rack, stir occasionally until room temperature. Stir in whipping cream and vanilla. Freeze according to manufacturers directions.

Print Homemade French Vanilla Ice Cream Recipe

Baked Trout Recipe
Makes 4 Servings

4 trout fillets, rinsed and dried (about 1-1/4 lbs. total)
2 Tbs. lime juice
3/4 medium tomato, chopped
1/4 medium onion, chopped
1/4 tsp. olive oil
2 Tbs. cilantro, chopped
1/8 tsp. salt
1/8 tsp. black pepper

Preheat oven to 350F. Place fish fillets in baking dish. In separate dish, mix remaining ingredients together. Pour over fish and bake for 15 to 20 minutes or until fish flakes easily with a fork.
Per serving: calories 260, fat 9.0g, 32% calories from fat, cholesterol 198mg, protein 40.1g, carbohydrates 2.5g, fiber 0.5g, sugar 1.4g, sodium 213mg
