There are two offers from Dennis at the Prepared Pantry. They are added freebies when  you shop at the Prepared Pantry. One of them is a free chocolate chip cookie mix. I loooooooooooooove this mix. It has real chocolate chips in the it. There is no comparing  the real chips and the kind you usually get at the store. Don't tell anyone this, but the wonderful tasting chocolate chips get eaten before I can bake the cookies and then I have to order more chocolate chips from the Prepared Pantry. I think I am addicted to  real chocolate chips. They keep yelling my name to eat the chips or order more for the cookies. Next time I think I need to order more of them with the cookies.LOL. The  cookies are wonderful too. My mailman in Lubbock loves them. I would leave some  baked cookies every so often in the mailbox for him. He told everyone that I made the
best chocolate chips in the world. The funny thing is the school (clear across Lubbock .. about 10 miles from me) smiled at me and said they heard I made the best chocolate  chip cookies. It was the school where I tutored. Wasn't sure how they knew I made cookies but I found out about a year later the mailman's son went to the same middle
school where I tutored.

Tonight I have had a fly pestering me all evening. I have a fly swatter but still have not
yet been able shorten his lifespan. Just a minute ago I saw the little critter on my monitor's screen. I whacked and whacked it and until I realized that is was actually my mouse moving around the screen. I have known I needed glasses but now I am convinced. LOL. The fly is still happily buzzing around and no monitor's were injured in the fly killing episode.

Almost Hamburger Helper Recipes

Seasoning mix:
(For low sodium version, use a low sodium bouillon.)
1- 1/2 cups nonfat dry milk
1 cup corn starch
1/4 cup beef bouillon powder
2 Tablespoons onion powder
1/4 cup dried onion flakes
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon black pepper
2 Tablespoons dried parsley
1 Tablespoon garlic powder
The seasoning ingredients can be mixed together ahead of time and stored in an air
tight container. The seasoning mix is used as a base for the following dinners.

For Chili Macaroni
1 pound ground beef, browned and drained
1 cup water
1/2 cup macaroni noodles (uncooked)
1 can chopped tomatoes
1 Tablespoon chili powder
1/2 cup seasoning mix
Combine all and simmer 20 minutes or until macaroni is cooked.

For Stroganoffound ground beef, browned and drained
2 cups water
1/2 cup seasoning mix
2 cups uncooked egg noodles
1/2 cup sour cream
Combine all except sour cream. Simmer 20 minutes or until noodles are tender. Stir in
sour cream and serve.

For Potato Beef Casserole
1 pound ground beef, browned and drained
3/4 cup water
1 box scalloped potato casserole
1 cup frozen peas
1/2 cup seasoning mix
Combine all and simmer, covered, until potatoes are tender, about 30 minutes, stirring
occasionally. Remove cover and cook until excess water is evaporated.

For Quick Lasagna
1 pound ground beef, browned and drained
1/2 cup mix
1 onion, chopped
2 cups water
16 ounces tomato sauce
3 cups lasagna noodles, uncooked, broken in bits
1/4 cup parmesan cheese
2 cups mozzarella cheese, shredded
Combine all except mozzarella in large skillet. Bring to a boil, let simmer for 15 minutes
or until noodles are cooked. Top with mozzarella. Turn off heat and let cheese melt.

For Cheese burger Macaroni use:
1 pound ground beef, browned with fat drained
1 cup water
1 cup uncooked macaroni
1/2 cup seasoning mix
1 cup grated cheddar cheese

Combine all except cheese, and simmer about 20 minutes, or until macaroni is cooked.
Add cheese and let melt. Stir so cheese is well blended.

Each recipe makes about 4 servings.

Hawaiian Popcorn Mix Recipe

3 cups Honey Graham cereal
1 cup salted peanuts
1 cup raisins
1 cup dried banana chips
2 tablespoons butter or margarine
2 tablespoons honey
1/2 teaspoon cinnamon
1/4 teaspoon salt
4 cups popped popcorn
1 cup flaked coconut

Heat oven to 300 degrees F. Mix cereal, peanuts, raisins and banana chips in jellyroll
pan. Heat butter and honey in saucepan over low heat until margarine melts. Stir in
cinnamon and salt. Pour over cereal mix. Toss until evenly coated. Bake 10 minutes,
stirring once. Stir in popcorn and coconut. Sprinkle with additional salt if desired. Store
in airtight container.

Sharon's BBQ Chicken Casserole Recipe

1 can Pork and beans -- (32oz)
4 Chicken pieces
1/4 cup Catsup
2 teaspoons Onion, instant minced
1/4 cup Brown sugar

Place beans & chicken in a 2-quart casserole. Mix together remaining ingredients; pour
over chicken and beans. Cover and bake in preheated 325'F. oven for 1-3/4 hours.
I put it in the crock pot and let it cook all day.

Moist Banana Bread Recipe

2 C Sugar
1 C Butter
4 Eggs
4 Ripe Bananas, mashed
1 C Sour Milk
2 Tsp. Lemon Juice
2 Tsp. Soda
1 Tsp. Baking Powder
1 Tsp Salt
4 C Flour

Cream sugar and butter very well; add eggs and beat well. Add sour cream with soda; Add bananas. Add dry ingredients and beat well. Add lemon juice, can also add nuts if you like. Bake at 350 for 50-60 min. Bake 3 regular size loaves of breads.

Poor Man's Steak with Gravy Recipe

1-1/2 lbs hamburger
3/4 Cup cracker crumbs
3/4 Cup water
1 chopped onion
1 tsp salt
1/4 tsp black pepper
1 (10 oz) can cream of mushroom soup
1/2 Cup milk

Mix together thoroughly the first 6 ingredients and press mixture into 1/2 to 3/4 inch thickness in tray or on a cookie sheet (I usually use a jelly roll pan because of the sides coming up a bit). Chill overnight. Cut into 4 inch squares. Coat with flour. Brown on both sides in skillet. Place in baking dish. Combine the soup and milk and pour over meat. Bake at 350º for 1 hour. Serves 6

Print Poor Man's Steak with Gravy Recipe

Corn Dog Casserole Recipe

2 cups finely minced celery
2 Tbsp butter
1-1/2 cups sliced green onions
1-1/2 pounds of hot dogs (I use Oscar Meyer beef)
2 eggs
1-1/2 cups milk
2 tsp sage
1/4 tsp black pepper
1/4 tsp salt
2-8.5 oz Jiffy muffin mix
8 oz sharp Cheddar Cheese shredded

Sauté celery in butter for 5 minutes. Add onions and continue cooking 2 minutes. Dump skillet ingredients into a large bowl. Cut hot dogs in half lengthwise, then chop into bite size pieces. Sauté dogs in skillet; turning to brown. Add to bowl. Reserve 1 cup of hot dogs & veggies in a small bowl. Slightly beat eggs & milk together. Add egg mix and next 4 ingredients to bowl. Add 1-1/2 cups of cheese to bowl also. Mix all ingredients well. Spray 13x9 Pyrex. Pour in casserole. Top with reserve hot dogs and cheese. Bake uncovered 400* for 30 minutes.
*I made this for a birthday get together along with string beans, salad and a trifle. It was a real hit.

Print Corn Dog Casserole Recipe

Scalloped Corn Recipe

1 (16 ounce) can Cream Corn
2 eggs
1/2 cup milk
1/2 to 3/4 cup crushed soda crackers (14 to 16)
Grated cheese

Mix all above together. Put in buttered casserole dish dot with butter and some more grated cheese. Bake UNCOVERED in 350 oven for 45 minutes to 1 hour.

For 8 I double the recipe. It is an easy recipe to double, triple or whatever. When make for our complete family of 14 I triple the recipe.

To crush crackers I put in ziploc bag and use rolling pin. You want them real fine.

Got this recipe from Mom years ago and it is delicious.
It puffs up kinda like a souffle.

Oven Fried Yellow Squash Recipe

1/2 cup cornmeal
1/2 tsp salt
1/4 tsp black pepper
1 egg
1 Tbsp water
3 medium yellow squash-cut in 1/4" slices

Mix cornmeal, salt & pepper and set aside. Mix egg and water-beat well. Dip squash in egg mix then dredge in meal. Lightly coat jellyroll pan with Pam. Place squash slices in a single layer. Bake 450* for 30-40 min or golden turning once after about 20 minutes. Yld: 6 servings

Apple Chicken Salad Recipe

1/2 c. fat-free yogurt
1/2 c. apple jelly, melted
1 T lemon juice
2 C finely sliced celery
1/2 c. coarsely chopped pecans
1/4 c. orange juice
1/4 t. salt (optional)
3 c cooked chicken, diced
3 apples, unpeeled & diced

In large bowl mix yogurt, orange juice, melted apple jelly & lemon
juice. Add chicken, celery, pecans & apples.
4-6 servings
