Apricot Sweet Potatoes
3 pounds sweet potatoes, cooked, peeled, and cut-up
1 cup. brown sugar
1/4 teaspoon salt
1 cup apricot nectar
2 teaspoons grated orange peel
2 teaspoons butter
5 teaspoons cornstarch
1/8 teaspoon cinnamon
1/2 cup hot water
1/2 C. pecans, chopped

Put sweet potatoes in 9x13 baking dish. In saucepan, combine sugar, cornstarch, salt and cinnamon. Stir in apricot nectar, water and orange peel. Bring to boil, stirring constantly. Cook and stir for 2 minutes. Remove from heat; stir in butter and pecans. Pour over sweet potatoes. Bake, uncovered, at 350? for 20 to 25 minutes or until heated through. Yield: 8 to 10 servings.
