Bacon Hominy Scramble
6-8 slices bacon
1 (#2) can hominy, well drained
4-5 well-drained beaten eggs
1 teaspoon salt
1/2 teaspoon pepper
Fry bacon until crisp. Remove and drain. Brown hominy lightly in bacon
drippings. Add eggs and cook until done, stirring all the time. Add seasonings.
Crumble bacon into scrambled eggs. Serves 4-6 and makes a good supper meal.
