1 large eggplant
1 teaspoon salt
1/4 cup milk
1/2 cup Bisquick
1/2 teaspoon baking powder
1 cup water
Peel eggplant. Cut into quarters and cook in boiling salted water until tender.
Drain and mash. Add egg, Bisquick, baking powder and milk. Mix well. Drop by
tablespoon in deep fat. Fry until golden brown.
