Spinach Filled Pancakes

1 cup Bisquick
1 egg
3/4 cup milk
1/8 teaspoon salt
1/8 teaspoon pepper
1 (10 ounce) package spinach, cook,
chop and drain
2 tablespoons butter
1/2 cup evaporated milk
1 cup grated Swiss cheese
dash of nutmeg

Combine Bisquick or like , egg and milk. Beat until smooth. Drop 1/3 cup batter onto hot griddle to make pancakes. Keep warm as you make the filling. Combine spinach, butter, salt, pepper and nutmeg. Spread a small amount of spinach mixture onto each pancake.

Roll up and place in a greased baking dish. Heat evaporated milk with cheese, stirring constantly, until cheese melts. Pour over pancakes.
Bake at 400 degrees for 8 to 10 minutes.
