Return to recipes using buttermilk.
 

Sweet Potato Casserole

1/2 cup butter
8 sweet potatoes, cooked, peeled and sliced
1 tsp baking powder
1 tsp vanilla flavoring
1 tsp cinnamon
2 eggs
1/2 cup sugar
3/4 cup buttermilk

Add butter to the hot sweet potatoes and combine
the next ingredients and use electric mixer until
smooth.
Placer the mixture in a greased 2 quart casserole and
bake for 30 minutes at 350 degrees. The last 10 minutes
either top with marshmallows or pecan crumble topping.

Topping
1-1/2 cups brown sugar
1-1/2 cups chopped pecans
1/3 cup flour
1/3 cup soft butter

Mash with fork until nice and crumbly and top the casserole the last 10 minutes of baking.

Nancy this is my favorite. My family looks forward to the dish
every holiday. I have had this recipe for 4 years. It came out in the paper.

* Powdered buttermilk does not have to be mixed separately. I just add the powder with my flour and the water with the my other liquids and let it mix in the batter.
