Scalloped Bread and Chicken Casserole
6 slices slightly dry bread, crust trimmed
1/4 cup chopped onion
1 cup cubed cooked chicken
2 cups 2% milk
1/2 cup low fat shredded cheddar cheese
3 slightly beaten eggs Dash Salt and pepper
Spray a 10 by 6 in. baking dish. Lay slices of bread in dish. Sprinkle chicken
over top. Top this with cheese and onion. Combine remaining ingredients and pour
over the top. Bake in moderate oven 350 for 30 mins. or until a knife inserted
comes out clean.
Makes six servings.
