Zucchini Casserole
3 lg. zucchini, cut in cubes, unpeeled
1 carrot, grated
1 onion, cut fine
1 can cream of chicken soup
8 oz. sour cream
2 c. (16 oz.) Pepperidge Farm stuffing
1 stick margarine, melted
Mix stuffing with melted margarine. Add 1/2 to first 5 ingredients, sprinkle 1/2
on top of casserole. Bake at 350 degrees for 25 to 30 minutes.
