Apple Pudding Cobbler

1/4 c. shortening
1 c. sugar
1 egg
1/2 tsp. lemon
1-3/4 c. flour
2-1/2 tsp. baking powder
1/2 tsp. salt
2/3 c. milk
Approx. 8 med. apples (enough apples to layer cake pan approximately 2 inches)

Preheat oven to 350 degrees. Peel and dice apples and place in bottom of 9 x 13 inch cake pan. In small bowl cream together shortening and sugar. Add egg and lemon; mix well, in separate bowl combine flour, baking powder and salt. Add flour mixture and milk to egg mixture alternately. Spread over apples. Bake 30 to 45 minutes or until golden brown. Serve in a bowl while hot topped with sugar and milk.
