Diabetic Apple Crisp
2 c. sliced apples
3/4 c. unsweetened orange juice
Sugar substitute to equal 1 tbsp. sugar
1 tsp. cinnamon
1 tsp. lemon juice
1 c. graham cracker crumbs
2 tbsp. melted margarine
Place apples into 1 quart baking dish. Combine orange juice, sugar substitute,
cinnamon, and lemon juice. Pour over apples and toss. Combine graham cracker
crumbs with melted margarine and sprinkle over apples. Cover with foil or lid
and bake at 400 degrees for 25 minutes. Uncover and bake 5-10 minutes longer.
Makes 6 servings. 1 serving = 150 calories. 1 bread, 1 fruit, and 1 fat
exchange, no sodium.
