Old Fashioned Peach Cobbler

4 c. sliced fresh peaches
1 c. sugar
1/2 c. butter
1-1/2 c. all-purpose flour
3/4 tsp. salt
1/2 c. shortening
1/4 c. plus 1 tbsp. cold water

Combine first 3 ingredients in a medium saucepan; bring to a boil and cook over low heat until peaches are tender and mixture thickens. Pour peach mixture into a lightly buttered 10 x 6 x 2 inch baking dish. Combine flour and salt; cut in shortening with a pastry blender until mixture resembles coarse meal. Mix in water with a fork to form a stiff dough. Drop from a tablespoon on top, spacing evenly. Bake at 400 degrees for 30 minutes. Cool to room temperature before serving.
