Cranberry Nut Bread

2 c. flour
1 c. sugar
1 1/2 tsp. baking powder
1 tsp. salt (opt.)
1/2 tsp. soda
3/4 c. orange juice
1 well beaten egg
2 tbsp. shortening or margarine
1 tbsp. grated orange peel
1 c. cranberries, coarsely chopped
1/2 c. nuts, chopped

Preheat oven to 350 degrees. Mix dry ingredients. Add juice, egg, margarine and orange peel to dry ingredients; mix until well blended. Stir in cranberries and nuts. Turn into a 9"x5" pan, greased on bottom only. Bake 55 to 60 minutes until toothpick inserted comes out clean. May also use recipe for muffins.
