Old Fashioned Rhubarb Pudding

1 qt. rhubarb, cut up
1 c. sugar
1/4 c. melted butter
1 tsp. vanilla
2 eggs, well beaten
1 c. flour
1/4 tsp. salt
1 tsp. baking powder

Mix rhubarb and sugar; place in 2-quart dish. Combine butter, vanilla, eggs, flour, baking powder, sugar, and salt; pour over rhubarb. Bake at 375 degrees for 45 minutes or until done - will be a bit soft inside. Good served with maple syrup.
