Curried Chicken Salad
1 lg. orange
1 med. banana
4 c. salad greens
2 c. chicken, cubed and cooked
1/2 c. jellied cranberry sauce,
chilled and cubed
1/4 c. light raisins
1/4 c. salted peanuts
1/2 c. mayonnaise
1/2 c. orange yogurt
1/2-1 tsp. curry powder
Section orange, saving juice. Slice banana and dip in reserved orange juice. Tear salad
greens into large salad bowl. Arrange chicken, orange sections, banana, cranberry cubes,
raisins and peanuts atop lettuce. Chill. Combine mayonnaise, yogurt, and curry for
dressing; chill. Pass dressing with salad. Makes 4 servings.
