Strawberry Daiquiri Sorbet

1 c. sugar, placed in 2 qt. saucepan
2 c. water, added to sugar in saucepan
1/8 tsp. salt, added to syrup mix
1/2 c. cold water
2 tsp. RealLemon lime juice
1 small pkt. unflavored gelatin

Slowly add gelatin to the cold water and lime mixture and soak while the syrup is being heated to boiling. Bring the sugar water and salt mix to boil and boil for one minute. Add the soaked gelatin, water and lime juice to the hot syrup to dissolve the gelatin. Add 1 can Bacardi Strawberry Daiquiri mix to the syrup mix. Add one 12 ounce package of thawed frozen strawberries to the mixture in the saucepan. Add six packets of Sweet & Lite sugar substitute, equivalent to 2 teaspoons sugar per packet. Place mixture in one half gallon ice cream freezer can. Add 1 1/2 cups cold water to rinse out sauce pan and add to the freezer can. Freeze the mixture in a White Mountain Freezer using crushed ice and rock salt mixture. After 10-15 minutes the mix should be frozen. Remove the dasher and place the sorbet in a plastic container in the refrigerator freezer section.
Makes 1/2 gallon.
