Apple Pancakes #2

2/3 cup flour
2 teaspoons sugar
1/4 teaspoon salt
4 eggs
1/2 cup milk
3 apples, peeled, cored and thinly sliced
3/4 cup butter, divided
sugar and cinnamon

Sift flour, sugar and salt. Beat eggs until frothy. Beat in milk, add flour, sugar and salt. Beat until smooth. Saut?apples until tender in 1/4 cup butter. Sprinkle with sugar and cinnamon. Melt 2 tablespoons butter. Pour batter in pan to cover pan in a thin layer. When set, place 1/4 of apples on top and put on another layer of batter. Brown pancakes slowly on both sides. Turn out and roll loosely. Sprinkle with additional sugar and cinnamon. Repeat until all batter is used. To keep pancakes warm place in 250?-300? oven.
