Buttermilk Pancake
2 eggs, beaten
2 cups buttermilk, or 1 cup milk
2 cups flour, sifted
1- 3 Tablespoon(s) sugar
1/2 teaspoon baking soda, optional
1/2 teaspoon salt
2 teaspoons baking powder
1 Tablespoons melted butter
1/4 cup melted butter
In a bowl combine dry ingredients thoroughly. In another bowl combine eggs and
buttermilk. Blend into flour mixture until lumpy. Add butter. With a large spoon
or ladle, drop batter onto a hot greased griddle. Cook until bubbles appear on
the surface. Turn. Cook until brown. Remove from griddle. Brush each pancake
with melted butter. Serve with maple syrup.
Yields 15 - 20 pancakes.
