1/2 cup butter
2 cups sifted flour
1 tablespoon sugar
2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups buttermilk
Sift together into a large bowl flour, sugar, baking powder, baking soda and
salt. Remove egg yolks and beat until thick and lemon colored. Set whites aside.
To yolks, add melted butter and buttermilk. Continue to beat until well blended.
Add to dry ingredients only until batter is smooth. Beat egg whites until peaks
are formed. Spread the beaten egg whites over the batter and gently fold
Makes about 8 waffles.
