Cottage Cheese Pancakes
1 cup cottage cheese
2 tablespoons melted butter
4 eggs
1 teaspoon sugar
1/2 teaspoon baking powder
1/2 cup sifted flour
1 teaspoon sugar
1/2 teaspoon salt
Mix cottage cheese in a blender or food processor until smooth. Add eggs and
melted butter and blend a few seconds. Add flour, sugar and salt and blend
again.
Drop batter by tablespoons onto hot griddle or pan. Shape with back of spoon.
Turn when underside is light brown.
This recipe yields 25 pancakes.
