Date Pancakes

1 Cup buttermilk
1 Cup finely-chopped dates
2 Tablespoons margarine, melted
1 egg
3/4 Cup flour
1 Tablespoon poppy seeds
1 Teaspoon baking soda
1/2 Teaspoon salt

In mixing bowl, stir together buttermilk, dates, butter and egg to blend well.
Combine remaining ingredients; stir into buttermilk mixture, mixing lightly with a
fork. (Do not try to smooth out all of the lumps.)

Heat skillet; spoon batter onto skillet allowing about 3 tablespoon. of batter for
each. Bake until golden on both sides, turning once. Dust with powdered sugar
and serve with fresh fruit or syrup

This recipe yields 6 pancakes.
