Dutch Baby Pancake
1/2 cup water
1/4 cup butter
1/2 cup pancake mix
Bring water and butter to boil in a 2 quart saucepan. Add the pancake mix; stir
until the mixture leaves the side of the pan and forms a ball. Remove from the
heat; add 2 eggs, one at a time, beating well after each addition. Spread evenly
onto bottom and sides of a generously greased 9-inch pie plate.
Bake at 400 degrees for 15 minutes. Reduce the oven to 300 degrees and bake an
additional 10 minutes until golden brown. Serve with sprinkled confectioners
sugar and lemon juice.
Makes 1 serving.
