2 small eggplants
1 cup pancake mix
1/4 cup onions
1/4 cup bell peppers
salt and pepper to taste
Skin eggplant and boil until tender. Drain. Beat egg with eggplant. Add
chopped onion and bell pepper into eggplant and egg mixture. Season well.
Add pancake mix (just enough to look like pancake mixture). Heat skillet with
butter. Drop by spoonful in skillet. Cook until brown. Turn over and press
gently. Let this side brown.
