Grandma's Blueberry Pancakes
2 cups flour
4 tablespoons baking powder
1/2 teaspoon salt
1/2 cup sugar
2 egg yolks
1 cup milk
3 tablespoons shortening, melted
2 egg whites, beaten to soft peaks
1 cup blueberries
Mix dry ingredients. Combine egg yolks, milk, and melted shortening. Stir in dry
ingredients. Carefully fold in egg whites and blueberries. Pour from a pitcher
onto hot greased griddle. Bake until cakes are brown underneath. Turn carefully
and brown other side.
Serve at once.
