Grandma's Whole Wheat Waffles

1 cup whole wheat flour
1/2 teaspoon baking soda
3/4 teaspoon salt
2 tablespoons sugar
1 egg, separated
3 tablespoons butter or margarine, melted
1 cup buttermilk

Thoroughly sitr together the flour, baking soda, salt and sugar. Beat together
egg yolk and slighly cooled melted butter. Add buttermilk and beat to blend. Add
to flour mixture and stir just until dry ingredients are moistened. Beat egg white
until stiff and fold into flour mixture. Bake on a hot waffle iron according to
manufacture's directions. Serve at once with butter and maple syrup.
Makes 4 large waffles.
