Potato Pancakes #2
4 slices bacon, diced
2 large potatoes (1 pound)
1 medium onion
1/8 teaspoon salt
1/8 teaspoon pepper.

About 20 minutes before serving, 8 to 9-inch skillet over medium heat, cook
bacon. Remove to paper towels and drain. Discard bacon fat; wipe skillet clean.
Coarsely shred potatoes and onion. In bowl, mix potatoes, onion, bacon, salt and
pepper. Over medium heat, add 2 tablespoons butter until hot. Add potato
mixture. Spread evenly over bottom of skillet. Reduce to medium low and cook 5
minutes until brown and crisp, shaking frequently to keep pancake moving freely.
Invert pancake onto plate. Add 1 tablespoon butter into skillet. Slide pancake
skillet. Cook about 4 minutes longer until brown and crisp.
Makes 2 servings,
