Pumpkin Waffles

3 1/2 - 4 cups flour (white or wheat)
1/4 cup firmly packed brown sugar
4 teaspoon baking powder
1 1/2 teaspoon ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon salt
1/2 teaspoon ground ginger
4 large eggs, separated
2 cups milk
1 cup cooked pumpkin
1/4 cup melted butter or margarine

Combine in large bowl flour, brown sugar, baking powder, cinnamon, allspice,
salt and ginger. In separate bowl combine egg yolks, milk and pumpkin. Add
wet ingredients to dry ingredients, stir until just moistened. Stir in butter or
margarine. Set batter aside. Beat egg whites at high speed until soft peaks
form. Gently fold into batter. Bake in preheated, oiled waffle iron until crisp.
Serve with butter, maple syrup and toasted pecans. Makes 24 (4 inch) waffles.
