Sour Cream Waffles
1 cup sifted all-purpose flour
1/2 teaspoon salt
3/4 tablespoon sugar
2 egg whites
2 egg yolks
1 cup thick sour cream
2 tablespoons melted butter
Sift together the dry ingredients and set aside. In a small mixing bowl, beat
egg whites until stiff but still moist (about 1 minute). In large mixing bowl,
beat the egg yolks at high speed about 1 minute. Add sour cream and the melted
butter; beat until blended. Add the sifted dry ingredients and blend on low
speed for 2 minutes. Add beaten egg whites and fold in until well blended. Bake
in preheated waffle iron until golden brown. Waffles should be tender but crisp.
Makes 8 waffles.
