Honey Cheese Pie
1 cup flour
5 Tbsp butter
1 Tbsp sugar
2 Tbsp cold water
Sift the flour, add in butter and sugar. Once it's mixed well,
add in the cold water. Shape into a ball and put in
the fridge while you make the filling.
1 pound Mizithra cheese
1/2 cup honey
1/2 cup sugar
1 tsp lemon peel
Mix the cheese, honey and sugar thoroughly. Grate the peel, beat the eggs, and
then stir them in. Remove the crust from the fridge, and shape it into a pie
crust shape in a pan. Put some foil over it, and weigh it down with something to
keep it in shape. A smaller pan works well. Cook for 15 minutes at 350F to set.
Let it cool, then add in the filling. Bake at 350F for 45 minutes to cook.
