Fresh Pumpkin Pie

2 c. cooked pumpkin
1 c. brown sugar
1/2 tsp. salt
2 tsp. pumpkin pie spice
2 c. milk
2 eggs

Cut pumpkin in half. Clean out the seeds and strings. Place a teaspoon of water in pumpkin half. Cover with plastic wrap. Microwave on High for about 20 minutes or until the pumpkin meat is soft. Do the other half the same way. When pumpkin is done pour off water. Scoop out cooked pumpkin. Puree pumpkin in blender or food processor. At this time the pumpkin may be frozen for use at another time.

Combine pumpkin, sugar, salt and spice; mix thoroughly. Add milk and beaten eggs. Turn into pastry lined pie plate and bake until set in moderately hot oven (450 degrees) for 10 minutes, then reduce to 350 degrees and bake 30 to 35 minutes longer. Makes one 9-inch pie.
