Print Recipe

4 skinless, boneless chicken breast halves, about 1 lb.
4 thin slices cooked ham
4 thin slices Swiss cheese
1 pkg. (10 oz.) frozen, chopped spinach, thawed and well drained
1 can Campbell's cream of chicken soup
1/3 c. water
1/4 c. sliced green onions
1/8 tsp. dried thyme leaves

With flat side of meat mallet, pound chicken to 1/4 inch thickness. Place a ham slice, a cheese slice, and 1/4 of the spinach on each chicken piece. Roll up chicken from short end secure with wooden toothpicks if needed. Place chicken, seam side down in 12 x 8 inch microwave safe baking dish. Cover with vented plastic wrap, microwave 5 minutes on high. IN small bowl, mix soup, water, onions, and thyme until smooth. Pour over chicken. Cover and microwave 10 minutes on high or until chicken is fork tender rotating dish once during cooking. Let stand, covered, 5 minutes. Makes 4 servings.
