Carrots with Tomato French Dressing
4 medium carrots, grated
Tomato French dressing, to moisten
Tomato French Dressing
1 tablespoon dry mustard
1/2 teaspoon salt
3 tablespoons sugar
1/8 teaspoon pepper
1 tablespoon onion juice
1 cup salad oil
1/2 cup vinegar or lemon juice
1/2 can undiluted condensed tomato soup
Combine dry ingredients. Blend into oil. Add onion juice and let stand 10 to 15
minutes. Add vinegar and soup. Beat until dressing is thick. Dressing not used
may be stored in covered jar in refrigerator. Will keep several weeks.
To lower sodium omit salt and choose a lower sodium tomato soup such as "Special
Request" by Campbells.
