Cheese Stuffed Tomato Salad
6 to 8 firm ripe tomatoes, peeled and cored
2 (3 ounce) package cream cheese
1/2 cucumber, grated
2 or 3 teaspoons chopped parsley
1 teaspoon minced onion
1/2 cup heavy cream
3/4 cup mayonnaise
Salt to taste
Mix cream cheese, cucumber, parsley, onion, salt and 3 tablespoons of the
mayonnaise. Stuff the mixture into six or eight tomatoes, depending on size.
Whip the cream and combine it with the remaining mayonnaise. Place stuffed
tomatoes in lettuce cups and top with the whipped-cream mayonnaise.
