Fresh Tomato Zucchini Sauce
1/2 cup butter or margarine
2 cups chopped onions
1 clove garlic, sliced
2 cups sliced celery
2 cups chopped green pepper
Cook until tender. 4 cups medium zucchini in 1/2 inch cubes
Cook 5 minutes. 12 medium tomatoes, peeled and chopped
2 teaspoon flavor enhancer
2 teaspoons salt
1 teaspoon sugar
1/2 teaspoon. pepper
2 teaspoon dried leaf thyme
1 bay leaf
Simmer, covered, for 45 minutes. Remove bay leaf; cool. Ladle into freezer
containers. Makes 3 quarts. Serve as a sauce over meat, chicken, rice, etc.
