Cornbread and Apple Stuffing for Turkey

2 golden or red Delicious apples, finely chopped
3/4 cup chopped onion
1/2 cup chopped celery
3 tablespoons butter or margarine
1/4 cup chopped parsley
1 package (6 ounce) corn bread stuffing mix
1 teaspoon salt
1 teaspoon thyme leaves
1/2 teaspoon sage
1/4 teaspoon ground black pepper
1/2 cup hot water

Core and finely chop apples to equal 1 1/2 cups. Saute onion and celery in butter. Stir in apples, parsley, stuffing mix, salt, thyme, sage and pepper. Toss with hot water to moisten. Spoon stuffing into 1 1/2 quart baking dish. Bake at 325 degrees for 25 to 30 minutes. Nice served with chicken, pork or fish or makes enough to stuff an 8 pound turkey.
Makes 6 cups.
