This is for Toni, who wanted recipes
for a low salt and low potassium diet. I can't help with the low potassium part,
but my husband is on a low salt diet and what we have found is that most
processed food contains high amounts of salt. Reading labels is crucial, as salt
is in almost everything that you buy at the store. All milk sold in our area is
high in salt. This may not be the case in the area where you live. Other dairy
products are also high. Even some fresh fruits and vegetables have salt in the
solution they use to wash them or that are used to make them "look prettier".
Products that are almost always extremely high in salt are deli meats, hot dogs,
bacon, ham, sausage, soups, salad dressings, crackers, cereals, cookies, snacks,
bread, salad dressing and condiments. You can find no salt products or low salt,
but you have to read the labels carefully. Just because it says low salt does
not guarantee that it is low in salt. The low salt peanut butter in the store we
usually shop is higher in salt than the version we buy, which is not labeled low
salt. I never add salt to anything I cook or bake, regardless of what the recipe
lists. You can use many of the recipes that you have been using, just make sure
you use no salt or low salt products. I would also encourage you ask your
husband's doctor to refer you to a dietician who can work with you on reading
labels, modifying your recipes and finding new ones. Eating out can also be a
challenge, as salt is heavily added in most restaurants. You can ask them not to
do this and most will accommodate you. Even with all this we eat well and do not
feel like we are starving. It is just a matter of learning a new way of cooking
and baking. I hope this helps. Robbie IN
